Chocolate Caramel Truffles Recipe

If you like how chocolate and caramel go together you will definitely love these caramel and chocolate truffles. Sweet, a bit salty, chocolaty and chewy, with a great flavor and a crispy texture coming from the cocoa nibs, quite hard not to get in love with them. Ingredients Makes about 25 truffles 3/4 cup (150g) sugar 1/2 cup (120g) whipping cream 7 oz (200g) bittersweet chocolate. chopped 1/2 tsp (3g) salt 1 tsp (5g) vanilla extract 1 1/2 tbsp (15g) cocoa nibs, optional Cocoa powder or grated chocolate for coating 1. Place the sugar in a heavy bottomed saucepan over low-medium heat, and cook until sugar dissolves, stirring with a wooden spoon until it gets a caramel color. 2. Remove the pan from the heat and add the cream. It will bubble a little bit. 3. Cook for about 1 or 2 minutes stirring constantly until smooth. Remove from heat and add salt vanilla extract and chocolate. Stir well until smooth. 4. Stir in cocoa nibs if used. 5. Transfer the mixture to a bowl and let cool at room temperature. 6. Refrigerate for 2 hours until hard enough to roll into balls. 7. Use a teaspoon or a melon-baller to scoop out the truffles and with greased palms form into 1 inch (3cm) balls. 8. Roll the balls in cocoa powder or grated chocolate and refrigerate for at least half an hour before serving.

Hi, I tried this recipe and after greasing my hands with oil and trying to making it into balls it jus melts away in my hand. :( I tried moulding it with using oil but still it sticks in my hand and I couldn't make it into good shape. I had refridgerated it for the whole night. and while making I may have added a little more of whipping cream is it because of that? please temme how do I correct this or where did I go wrong

Hello Could you help me see what I did wrong? When I put the cream into the caramelized sugar it solidified instead of become a smooth mixture. I tried melting the caramel chunk but it became very thick and over cooked. What could have gone wrong? Thank you very much

i had a problem making these. The caramelised sugar solution kind of clumped as soon as I added the heavy cream. I had a tough time smoothing it out. is this common or did I miss out something here. however I followed the instructions word for word.

Whenever i try to make chocolate truffles, the mixture is too soft and it melts in my hands, what am i doing wrong? I use the right amount of chocolate/heavy cream, chilled, everything

Loved it though if I could do one thing differently, I would us white chocolate instead of dark and then dunk the truffle in dark tempered chocolate. Visually appealing and delicious

I will have to try this. i can't deny it. I would be in denial. Thats not a river in Egypt. Nice video. Also you put a good song together with a great recipe. Not boring at all.

I live in Bangladesh. in our country liquid whipped cream is not available. powder whipped cream is available. so how can I use it for the recipe? TIA
