Mango Raspberry Mousse Cake is a light, elegant, flavorful dessert bursting of summer flavor. Raspberries and mango are making a heavenly match while the pistachio cake and crunch are bringing a great texture and color. Ingredients Makes about 10-12 servings Pistachio Cake 2 eggs 1/3 cup (70g) sugar 2/3 cup (70g) roasted pistachios, ground 1 tbsp (10g) all-purpose flour 1 tbsp (15g) butter, melted White Chocolate Pistachio Crunch 2 oz (60g) white chocolate 1 tbsp (15g) whipping cream 1/2 cup (50g) roasted pistachios, chopped Raspberry Mousse 10 oz (300g) fresh or frozen raspberries 1/4 cup (50g) sugar 1 tbsp (15ml) lemon juice 1/2 tbsp (5g) gelatin powder 2 tbsp (30g) cold water 7 oz (200g) whipping cream (35% fat, chilled Mango Mousse 10 oz (300g) mango, puree 1/4 cup (50g) sugar 1/2 tbsp (5g) gelatin powder 2 tbsp (30g) cold water 7 oz (200g) whipping cream (35% fat, chilled Raspberry Jelly 4 oz (120g) fresh or frozen raspberries 2 tbsp (30g) sugar 1/2 tsp (2g) gelatin powder 1 tbsp (15ml) water

Hi, I made this and it looked fantastic but felt like something was missing in flavor. Was I supposed to use salted roasted pistachios or unsalted? It is hard to find unsalted pistachios but I made sure to use roasted and unsalted ones since the recipe did not specify. Just wondering if that may have been what made the cake part taste quite bland.

it was predicted to be a hot day, so i knew this would be a good choice for dessert. replaced the raspberries for strawberries as i had a lot at home. it was a success with everyone, but for my surprise the big hit was the pistachio layers one more great cake from your repertoire =D thank you very much for all of it

Thank you for this beautiful recipe, it turned so delicious, one thing i would do different next time is to put more gelatin into mango layer, mine was still a bit melted after over night cooling in the fridge. Otherwise everyone was saying how fresh, rich in flavor and delicious this cake is.

piece of art as usual i have one concern about gelatin in such desserts. would it maybe change the taste? the gelatin i have available in my country has some gummy taste to it: / i wonder if this is just the one i used before or all kinds of gelatin would have some taste?

You bring all of your recipes to perfection. I have tried few including the walnut caramel mirror cake and it's the most delicious cake I have ever tried. Please make chocolate mousse domes I would love to see that.

Could someone recommend where I could buy a cake ring like the one she uses. Ive looked on amazon but they dont have great reviews. Online or in store is fine. I live in Alberta Canada btw.

Can i replace the gelatin powder by agar agar? And if so, should i use the same amount you used for the gelatin and cold water mixture? Btw awesome recipe, never miss one of your videos.

Nice recipe, but why on earth would you want to add sugar to mango? I would definitely leave that out, or maybe just add a teaspoon or two to the cream, but no more than that.
