I used this technique to make my bubble & squeak. Didn't have enough leftover potatoes to bring it all together & too much cabbage so thought why not. Also threw in the leftover corned beef & fried it until there were little crunchy bits which added nice texture to it. Just toss & flatten until nice & brown throughout. This technique also makes it drier which is what you want when you have too much cabbage.

I cook my bubble and squeak slightly differently. Once the veg is drained I then add milk and butter and mash it all up then add some olive oil to the saucepan and fry it. Never tried it with sausage like that before looks gorgeous. Might have to give it a try one day. What are the 2 types of sausages jamies used in this video called?

Speaking for the Americans among the FoodTube audience I would like to ask, WHAT IN THE WORLD IS BUBBLE AND SQUEAK! How in the world did you all come up with that name? I thought those of us on the left of the pond had some odd colloquialisms, but you Brits take the cake! ;-)

Beauty, if I'm having that for breakfast I'd have to put a poached egg on top, leave the gravy for lunch, like what you done with the sausage, what are you like with pie and mash not forgetting the liquor.

Cannot wait to give this a go. In South Africa we can buy the sausage already like that - boerewors, have you heard of it? I wonder whether that would work. I'll give it a go and let you know xxx

I had always thought that 'squeak' was always cabbage. The onion sauce was brilliant! I had thought you had to do the onions on the stove top, slowly over time.
