I prefer to cut off the tops, remove the seeds quickly with a curved peeler, stuff, wrap, and place them either in a rack with holes or on longer wooden skewers and I cook them about 40 minutes or more on indirect heat. This results in a milder taste and softer chile flesh. The smaller cut at the top also leaks less (none) than than a huge incision. The longer cook time also promotes a smoky flavor.

We Texans practically live on these poppers. Father's Day? You need poppers. Fourth of July? Poppers. Sunday dinner? Side of poppers. But seriously, we scrape even the casing out with the seeds so the meat is wet and exposed. Makes them much more bearable and not so hot. Next time I'll add the spring onions and seasoning to the cream cheese! That was a great idea!

I guess the pinch of paprika really makes it extraordinary! I really enjoy paprika and this recipe, you're the bomb! =) Is there a way to do them another way than on the grill? I can't always use one but I'd love to prepare these

I need to try this, thank you for the Idea. In return, try dried plums wrapped in bacon, the plums kind of caramelize and the grilled bacon makes it as if you taste a bit of heaven, you will love this, I'm sure!

Thank you DJ BBQ, I'm growing alot of jalapeno's here in Japan(its the only way to find jalapenos in japan) and my japanese friends can't handle the heat, leaves more for me.

A good recipe to represent the United States with. Try blanching the jalapenos before stuffing them to cook more evenly and a little bit faster. Blessings ChefMike
