What a wonderful show! I'm digging how humble his kitchen is. I'm not a very good/creative cook (yet) and sometimes I'll watch tv cooking and wonder how to replicate a technique without a fancy gadget. The shopping segement was a great help. And not only is the food is beautiful, but the chef isn't bad on the eye, either. Keep up the good work, Brother!

OMG! We have plaintains here in Brazil as well! They very commonly used in dishes in the northeast but I'm from the southeast and we don't have the habbit of using them at all. I see them being sold in the market but never tried. Wouldn't know how to ook it. Now I super feel like trying this recipe! Never seen the chilli thing though.

Loved this video - the way you explained what to look for in the lesser used (by me) ingredients is really helpful. Never really been sure how to use plantain - see them in the supermarket and walk past them - same with pomegranates - will definitely try this.

Shay you are a legend for this great burrito. This combines so many of my favorite ingredients and flavors into one quick and easy tasty Mexican, Caribbean meal. I am surprised that I have not thought of this myself lol. Nice one brother.

That awkward moment when you realise your country doesn't import neither plantains nor pomegranates and that as chili isn't used as much in the kitchen here it's hella expensive and you simply can't make half of the recipe

I made a plantain burrito for brunch a few weeks back and it tasted amazing! Will try this recipe out as the pomegranates and ancho chillis seem like such a good addition! Thanks for sharing xoxo

this is so similar to how i cook, except no plantains around Iowa so i use sweet potato, and I get dried guajillos and grow a ton of peppers tomatillos too. : good recipe!

I wanted to make food that was so good, it would kill you. Or you'd die so like tasty but raw so you'd get food poisoning, sorry like I'm not sure what you mean?

this has become a staple in our kitchen. although ancho chilies are not readily available here, we created a little workaround with roasted peppers and chipotles.
