Umm Japanese mayonnaise doesn t contain any Dashi of any kind. I m Japanese living in Japan and here we have more tasty mayonnaise than kewpie, but if you want to recreate the kewpie mayonnaise, try making with: Salad Oil (blend of non-gmo soybean oil, sufflower oil, HO sunflower oil etc, pasteurized egg yolk, true rice wine vinegar, salt, spices, amino acids, and spice extract. No sugar and no Dashi (Japanese stock. We don t ever add any water (stock) to any mayonnaise it will spoil in a few days. The addictive taste comes from the proprietary ratio and the simplicity but freshness of the ingredients, AND the Amino acids (MSG. They also make it in a sterilized environment. If you re very interested in how they make it, you can go visit their factories as they have tours in each location in Japan. Elementary school kids take day trips to visit factories with lunch boxes often. I dislike any kewpie mayonnaise as it contains MSG and there re far better brands of mayonnaise in Japan, but the world seems to be going crazy with the Kewpie mayonnaise! Mind boggling!

Hmm. not sure I wanna trust someone who already messes up the pronounciation lol There's another guy Youtube (the second recommended video there) where he says the difference between normal mayo and kewpie is Soybean oil (so no canola, and also that there's no sugar in Kewpie. Seems more trustworthy tbh, this just seems like a random take on mayo. Or maybe that's the essence of Kayw-pie mayo, I dunno, could be good (it probably is, but doesn't seem like Kewpie at all.

Great taste well done. For anyone trying this and need to substitute oil. make sure to taste the oil before using it. You need to make sure the oil you does not ruin the taste of the vinegar mix. In my first attempt i used olive oil as its the only oil i had turns out it tastes like burnt plastic. Best oil i can recommend is soybean oil if you can find it. Otherwise use an oil with little to no taste.

I don't have a food processor so i make this with only fork and a really deep bowl lol my im used to whisking anything when im making something like frothy coffee, whip cream and such im so used to it that my arms don't get tired for some time haha someone will just pour the oil for me lol anyway it did taste good i'll make some more soon.

Oke. It didn't worked out I melted the oil in the microwave and poor it right in the boil whit egg (slowley) but it kept being liquit, I think i know what went wrong because the oil was still hot when it goes by the egg so the egg started to 'cook' and the mixture was waisted maby it can turn out goed by letting the oil cool down a bit Greetings

nope, just make sure to get high quality fresh eggs, also make sure the eggs have been stored properly e. j. not gotten too hot (best to keep in a fridge at all time) you run the risk of salmonella when eggs get too hot. If your worried about the risks you should Google it and get informed, never take someone else s word for it, even mine: )

Theoretically you can use any oil to be emulsified in to egg yolks and make mayonnaise, I have tried doing it with rendered bacon fat. that was interesting. But coconut oil might become too stiff when you place it in the fridge, could become rock solid. Then again who knows I have never tried it, give it a go see what happens.

oh man! i was looking to make this recipe for a long time. every time i made sushi i decided i should use the kewpie instead, just to be safe. i just made it now and it was ABSOLUTELY IDENTICAL! i'm not just quite there in the matter of texture, but the flavor is unbelievebly accurate. awesome recipe, thank you very much!

Hello! I tried the recipe, and it came out as too much thin and the taste of lemon was too strong. I seen that in the recipe there are 2 tablespoons of lemon, however in the video, the lemon seemed quite less than the vinegar. Might there be a typo and the lemon is two teaspoons instead of tablespoons? Thanks a lot!

Does the choice of the OIL change the taste from the real true tast of the Kewpie mayonnaise, n what make the real taste of the Kewpie mayonnaise? Is it the Dashi stock or the mayonnaise? I'm trying to get the real or the most closes taste of the Kewpie mayonnaise here, because i never taste it. Thanks for your help.
