This looks amazing! I was kinda grossed out by the squid ink, but I know that it doesn't taste like anything, right? Maybe, I don't know. Also, your eyes freaked me out! R those scalara lenses? I've seen people wear them before, and they r freaky! shivers Anyways, great video as always Chef Davey, and Happy Halloween! :D

Two questions: 1) Could the desiccated carrot be made in a fan-forced oven if I set it low enough? If so, how high/long would you set it for? 2) Could I replace the squid-ink rice for a mixture of wild and black rice for a bit of added texture? If so, would you cook it the same way you cook your white rice?

+How To Make Sushi I see many chefs and cooks cut towards themselves and I found it peculiar because I was always taught to cut away from the body to prevent major injuries. Is there a reason why you cut towards yourself and/or others do the same?

Why always so complicated, hard to follow and pointless because in the end you're just gonna eat it like any other sushi& so expensive every episode you have some type of new gadget we HAVE to buy to make the recipe.

Can't decide If I like more the dried carrot on the top or the calamari ink. In Spain we typically eat it with calamari. I will definitely try it in sushi rice: ) very nice recipe!

I one time did a similiar thing with mushrooms to add effect to a dish and half of the people asked me where i bought it they didnt believe me that you could do it at home. -.
