Nice video and awesome looking sushi! I suggest you to experiment with different substitutes for the nori - for example once I tried making sushi with chinese steamed pancakes (thin, a bit sticky, and somewhat elastic) and it turned out to be a good idea. Also tried colouring the dough in different colours and the result was pretty interesting(haven't tried rainbow yet! Once again, great video and keep inspiring people to be creative and experiment!

This video makes it look like your knife skills are really not that good. They just look like an advert for knives which are actually pretty shit. Get better knives than the shit you're using because they really aren't good.

Everything you make is so lovely, the only thing I would replace is the farmed salmon with wild salmon. Not sure where you're from, I'm guessing wild salmon is harder to get, thus the farmed salmon.
