1: 21 perhaps I didn't get your point? You indicated that lower quality (non extra virgin) olive oil was sometimes better than extra virgin, but then you proceeded to use an extra virgin olive oil. I think the point was that there are many types of olives and many ways to make an extra virgin olive oil, so we should experiment with those. Truth be told, one you get out of extra virgin olive oil into virgin and plain-jane olive oil the distinct characteristics of different olives disappears. Because then it's heated and/or chemically extracted which eliminates the goodies that contribute uniqueness.
