Craving an enchilada dinner, but short on time This one-pan beef and rice enchilada skillet is your answer! Cook up dinner in under 20 minutes! Skip the oven and savor all the classic enchilada flavors savory beef, fluffy rice, melty cheese, and rich enchilada sauce in a single skillet. Ingredients 1 lb lean ground beef 2 cups Minute rice 1 Tbsp tomato chicken bouillon powder 1 tsp onion powder 1 tsp garlic powder 1/2 tsp ground cumin 1 3/4 cup water 1 1/2 cups of your favorite enchilada sauce 6 to 8 oz mild cheddar cheese salt & pepper to taste pan with a lid

I tried the lazy slow cooked chicken legs and mashed potatoes. I had to go to Plan B and use the oven at 250 degrees F for almost 3 hours in a large pyrex baking dish because the crockpot I have wasn't working. But the seasoning on the chicken (I omitted the the Montreal Chicken Seasoning because I didn't have it) made it oh so good. The guests that came over on Friday absolutely loved it and I can't wait to make this again in the future.

I made your green salsa verde chicken/rice casserole yesterday. It is wonderful. The only thing I would have changed is NOT using TILAMOOK mozzarella cheese. It is way too chunky (large shreds) and didn't melt well enough. My bad. That cottage cream cheese hack is going into heavy rotation. I can use it SO many ways. Thank you, for YOU!

Oh My! That looks so good! I'll be making that for sure. Another good one. All this good Mexican food we would have to go to a restaurant to get but with all of your videos we're learning how to cook them. You're also helping us save money by cooking at home. I feel like I'd miss the texture and flavor of corn tortillas in anything with the word enchilada in the name. Just me being weird!
I love you nod to those without a kitchen in full. We lived in a hotel for a week and lived out of electric skillet meals!

I've never seen minute rice before. In the UK we have easy cook rice but it still takes like 10-15 mins. Or we have microwave 3 minute rice. Is the minute rice just the name or is it already cooked and genuinely takes only one minute

Thank you! I rent a room and sometimes the shared kitchen is being used or there may be pots/pans in the sink from my housemate so this is definitely a go-to dinner or weekend prep for a busy work week! Mmm easy & looks delish!

I just used that HEB enchilada sauce, it was spicy, but good. I added a can of mild enchilada sauce to make a double batch of enchilada casserole. Can't wait to try your recipe!

I remember when I was young, my grandmother sometimes used minute rice. I will be buying it again. Recipes come so easy with mixing minute rice in them.
