Today I am cooking at home and making seafood cornbread dressing. This is great as a meal or as a side dish.
Ingredients
8x8 pan of cooked cornbread see recipe below
8 oz (227 g) lump crab meat
10 oz (283 g) small to medium shrimp
1 small bell pepper (diced)
2 celery sticks (diced)
1/2 of a small to medium onion (diced)
2 cloves of garlic (minced)
1 Tbsp (15 ml) cooking oil
4 Tbsp (57 g) unsalted butter
1 to 1 1/2 tsp Old Bay seasoning
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp rubbed sage
1/2 tsp dried thyme
1/4 tsp cayenne pepper
1/4 tsp smoked paprika
salt and pepper to taste
1 to 1 1/2 cups (236. 5 to 355 ml) vegetable broth
1 large egg (optional)
CORNBREAD
1 cup (155 g) yellow cornmeal
2/3 cup (85 g) all-purpose flour
1 Tbsp (13 g) baking powder
2 Tbsp (25 g) sugar
1/2 tsp salt
1 Tbsp (15 ml) cooking oil
3/4 cup (177 ml) milk
1 large egg
greased 8 x 8 or 8 inch round pan
Bake at 350 degrees F / 176 degrees C for 20 to 25 minutes
