Today I am cooking at home and making a fluffy and soft corn casserole. This is easy to make and your can substitute the box of Jiffy corn muffin mix with a scratch made cornbread mix. Please check below for the printable recipe link. Ingredients 1 box Jiffy corn muffin mix (see below for substitution) 2 large eggs 15 oz can of corn (drained) 14. 75 oz (418 g) can of creamed corn 1/2 cup (120 g) sour cream 1 stick of unsalted butter (113 g) 3/4 cup (177 ml) whole milk 1 cup (75 g) shredded cheddar cheese 2 to 2. 3 quart baking dish Bake in a preheated oven at 350 degrees F / 176 degrees C for 50 to 55 minutes cook time may vary N O T E S: You can substitute the box of Jiffy corn muffin mix with the ingredients below SUBSTITUTE FOR JIFFY MIX 1 cup (155 g) yellow corn meal 2/3 cup (85 g) all-purpose flour 1 Tbsp baking powder 1/4 cup (50 g) sugar 1/2 tsp salt

Jiffy mix is a pantry staple for me. I like to do something similar and pre bake half the mixture just until it skins over, add a meat mixture (picadillo, etc, cheese and cover with the rest of the batter. 'Tamale pie' to some folks. Great camp chow if you have a means to bake or coals with a Dutch oven to bake. Making the mix yourself in a large batch would be great for a camp situation, think corn cakes with bacon and fried eggs as one recipe.

Looks fantastic! I love Jiffy Corn Bread mix for just regular corn muffins. Also, I lived in the South for a long time and was introduced to corn pudding which is a more custard version of what you made. Both look equally delicious. Glad you are having printable recipes now, thank you!

I made a sweet version of this casserole by omitting the cheese and sour cream and adding a cup of white sugar, 1/2 cup brown sugar, tablespoon of vanilla extract, bar of cream cheese and it came out so delicious, creamy sweet corn souffle like. dessert.

I have been making this EXACT RECIPE for years now and people BEG me for it!
It is easy to adapt with chopped chillies or jalepenos, different cheeses added, or even crumbled bacon or diced ham.

A tasty, easy to make side dish! Always a hit at a meal. Tweak it with crispy fried bacon pieces, shredded cheddar cheese or a little finely chopped green pepper. Great with meat loaf or country ham!

The chef at my old job used to just add corn to jiffy mix and call it cornbread I had to keep my soul from dragging him every time. This looks like his dish looks very good.

I make corn casserole for Thanksgiving every year. I add cream of corn, broccoli florets, and shredded cheese to the mixture with saute onions. Yummy!

Thanks for sharing a from scratch version. I sometimes add cooked maple brown & serve sausage or lil smokies to it and serve with eggs for breakfast.
