My mother & I used to have fried potato sandwiches for breakfast, lunch or dinner from time to time. You would probably want to slice the potatoes into thin-ish rounds & then fry them to your desired doneness/crispiness & season to your preference. Put mayo on a couple slices of bread, pile on the potatoes & enjoy your sammich! :)

Boil to make em soft, fork tender, ice bath or cold water to stop the heat, dry em, you can dust in flour, or seasoned flour. Then fry em in tallow, duck fat, pork lard or olive oil. thats how a lot of us professional cooks do it. crispy outside, soft side

I peel my potatoes then rinse and pat dry. I put them in a microwave container cover for about 1-2mins then I slice and fry them in the oil and they cook faster without needing to put a lid on just turn them when golden

Looks wonderful. A little onion and a little smoked sausage- perfect. I love fried potatoes. There is nothing that can be wrong with fried potatoes - no matter how they are cut or quartered.

I never knew you could shallow fry French fries crispy like this! Brilliant! I could definitely eat potatoes as a meal. I would call it my meatless meal for the week for sure!

For speeding up the process:
1. Fully cook your potato wedges in the microwace. 2. Pat dry any juices afterwards. 3. Finally pan fry them till golden brown.

Since I became diabetic and keto, them good ole tatorz are off limits. It is thee main food i think of that I sure do miss so very, very much.
