This recipe would be a great way of using up some veggies from a garden. I think this would be a quick and easy way to get more veggies into your family's diet. I would love to try this with a pizza or marinara sauce and incorporate some riced cauliflower and a gluten free type of flour into the crust. I think that would taste incredible. I got to try a sample of a cauliflower crusted pizza from CostCo for the first time a few weeks back and it was absolutely delicious. That looks fantastic, I can't wait to try it. Thank you for sharing.

For a lower calorie and lower fat option, instead of Almond Flour, try Besan (or chickpea flour maybe mixed with some rice flour for less protein) since too much protein is VERY BAD for our health and all we need is less than 10 percent of our calories from protein (similar to what is in human breast milk) We have been taught ALL WRONG about what we should and should not be eating. Protein is one thing we are eating WAY TOO MUCH OF.

Also for a ricotta cheese recipe alternative for perhaps a lasagna recipe, there are some good Tofu recipes that combine fresh garlic, Miso paste and onion powder with salt and mix in a food processor. You won't miss the cheese and I'm a former cheese addict who grew up eating a wide array of cheeses.
