Today, I am craving baked enchiladas, and these hit the spot every time. I am making cheese enchiladas smothered in chile con carne. This is an easy ground beef recipe that is delicious. What temp to bake enchiladas I bake at 375F covered for 20 to 25 minutes. EASY MEXICAN RICE ENCHILADA INGREDIENTS 1 Tbsp cooking oil 1/4 diced onion (optional) 1 lb 85/15 ground beef 1/2 tsp salt 1/2 tsp cracked black pepper 2 Tbsp light chili powder (I use Fiesta Bolner's Brand) 1 Tbsp beef bouillon powder 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp black pepper 4 1/2 Tbsp all-purpose flour 16 fl oz water salt & season to taste INGREDIENTS 14 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 to 14 oz cheddar cheese (or Colby jack cheese) 9 x 13 baking dish How to make Tex-Mex Enchiladas Ground Beef recipe ideas for dinner

Looks delicious, will have to make. Now for what I’m hoping u can show how to make is polvorones cookies. I’m 74 yrs old n when I was young my grandma made them for weddings n Christmas. My aunts never got the recipe as she didn’t use one but they did know the ingredients. It was just flour, sugar, lard. She would boil cinnamon sticks n anise in water n that would be added to make the dough. We’ve all made them even using my aunts recipes they’ve come up with n they just don’t taste the same as my grandma’s but they are good. Anyway they use crisco instead of lard would that make a difference. Anyway I’ve looked through recipes n the use cinnamon but not anise or just add anise to the flour. I’m hoping you have a recipe for these delicious cookies Thank you. Love all your recipes.

I have made these many times. DO NOT OVERCOOK. I left them in too long one time (maybe extra 10 mins) and tortillas become tough and hard on bottom. Also when heating the corn tortillas to soften prior to filling and rolling, you def do not need to use that much oil. Just a few drops on a black cast iron flat griddle per tortilla will do. I do modify the cheese filling a bit with a combo of cheddar and pepper jack cheese, some raw onions (i like the crunch, and pickled jalapenos or very finely diced fresh serrano or jalapeno peppers. And same with the beef filling, add some peppers, etc, in there. Mix your seasonings together first for ease of preparation.
These are definitely a go to fave.

Thank you yet again from displaced San Antonians on the East Coast! We got so homesick for our Tex Mex food we had to learn to make it ourselves! I'll make these enchiladas after my next batch of corn tortillas! Should I order Knorr Beef Consomee Powder Like the Mexican food, the tortillas here are truly terrible- trucked here from California or New York and $4. 99 for a bag of 10! We make all our own now. We have followed you for years and made your tamales, Mexican rice, Chile con Carne, crock pot recipes, etc and its like being home! THANK YOU! Ps- the Korean Gochujong recipes were delicious too! More easy recipes please. You're so great I watch you so much. Trifle desert recipes i just bought a dish and looking for ideas. Rice recipes, pupusa recipe i cpuld go on and on lol torta recipes. Cactus recipes, i know cactus is go for us but i dont know how to incorporate in a dish

I had quite a bit of leftover taco meat. I decided to improvise so I use the leftover taco meat for the enchiladas. I added some broth to the meat and a little flour to thicken it ported over the enchiladas and bake them they were delicious!

Just wonderful. My mother made this dish very similar. She was from England and moved into Texas with Dad. She had to learn a whole new way to make meals. This was one of our favorite too

Oh my goodness, yes, please! I've been craving enchiladas! We have deep snow up here in northern Michigan, and it's been that way since Thanksgiving. So I need some great food. This recipe is exactly what I need.

My absolute favorite are the chicken enchiladas topped with chili con carne sauce from Don Pedro's in San Antonio. No one else comes close. Hopefully now I can recreate this at home. Thanks for a great recipe!

Hmmm. I picked up a package of chorizo spiced ground turkey today just because it sounded interesting. Maybe I'll use it to make the gravy and see how it turns out. These look yummy.

I only ever make salsa Verde chicken Enchiladas because I don't care for red enchilada sauce. Never occurred to me to top cheese ones with chili. Definitely going on my list.

This reminds me of the Wednesday enchiladas they would serve in high school in the '80s in San Antonio. They were wonderful and I would always get a double order

Those look great. Never seen that tortilla prep method but that looks extra tasty. I've always just microwaved the tortillas to soften them for the rolling.

OMG i just made some yesterday trying to recreate that beef flavor. I used beef broth instead of water. But it didn't give what I was looking for.
