You were correct, this is like a Crepe. now I'm thinking about Enchiladas with this Batter, I've made both Burritos and Quesadillas with the batter. We like Corn Tortillas for Enchiladas, but if I don't tell anybody, they may not notice.
My Mom way back in the early 70's got a Crepe Pan, the first thing She made was Taquitos with Taco Seasoned Ground Beef, we had Salsa, Avocado, Cheese, Sour Cream, to put on top and we sliced and ate with a fork. pretty creative for a Canadian that grew up in a log Cabin on a little island until she was 18.

In 1978 I was in 12th grade. My high school had a mini cooking school in it. Classes counted as an elective credit. There were 4 sections in the very large area. Classroom, cooking library, dining area and 8 cooking stations. I got hold of a very old Italian cookbook and the recipe for homemade manicotti was identical for the crepe-like shell. The cookbooks stuffing was a bit different. It combined canniloni with the manicotti stuffing which I found odd, coming from an Italian family myself. My mother always used store bought shells.

I’ve made these for the last 40 years. My family loves manicotti this way. Once when we were eating in an Italian restaurant both of my kids ordered manicotti and when the dishes came to the table they were the tube noodles. They just stared and then asked what it was. For ages after when I said that we were having manicotti they would ask if it would be real. (It’s also good if you add a handful of fresh spinach to the cheese mixture)

With that batter it seems more like a crepe then a noodle but six of one, half dozen of another. Actually, doing a quick recipe search (it's been decades since I've made crepes) the only difference in that batter is it uses water instead of milk. Also, rolling them is much easier then stuffing the normal shells.

I have never liked those dry manicotti shells. All wobbly and fragile and tearing apart while I tried to stuff them who needs it This makes so much more sense. Thanks and happy Mother's Day!

Yes this is authentic if u make the shells with egg batter they r egg crepes. And this is manicotti. The tubes u buy at the store is not authentic manicotti that’s called something else.

I’m married and an Italian for 47 years and have made manicotti many times but have always wanted to make it with tortillas! I think it would be great that way. Yummy

Happy mother's Day not sure what that dish you made is called it is an authentic Italian dish though but I don't think they call it manicotti I could be wrong though.

You have made authentic Stracci di Antrodoco. Cannelloni/Manicotti are made with egg pasta. Whatever you want to call it, your dish looks amazing, and delicious!

This is the way I make Manicotti. The homemade crepes taste so much better than the fried shells. I do add some Mozzarella on top too. That looks yummy!

This reminds me of a manicotti dinner that I had at a high end restaurant in Vegas many years ago. Delicious and I will have to try.

Hope mama had a Happy Mothers Day. Most chefs agree that you get better canned tomatoes when they are whole. Love your Italian enchiladas.
