I am in my 50s and i was laid off in April. I’m finding out that it is a lot harder to find work at my age. Office, retail, fast food, delivery are not hiring me. The area i live in is saturated when it comes to delivery drivers and no one is hiring retail right now. I have worked office jobs most of my life, and have a good record, however no one will hire me. I know age discrimination is illegal but can’t be proven. I don’t mind entry level at all. I will take anything at this point. I’ve put out over 1, 000 resumes since April. I’ve been keeping track. Every day i get 4-6 emails telling me that they have filled the position or going with someone else. Its discouraging but i am still pumping out those applications. We are struggling right now on 1 income(my husband and i. We have had to sell the 2nd car and are struggling to make the mortgage to stay in our house. Our house is under $250k! Thankfully our daughter is grown and in her own, but she is struggling too. She makes more than we do but is living with roommates to make ends meet. It is a lot different from when i was a kid, mom didn’t work and home with kids. 1 income was sufficient for a house and car. I blame our government and state reps FULLY for all of this. We are a failing nation. We elect and pay them to take care of us, and they aren’t doing it. I fear in 10 years when i am retirement age and what is going to happen to me. I have no idea what i will do. Will i have a job that i have to work at until my body fails me Will i be on the street Angelica, my point is, your meal ideas for those of us that are struggling is very much appreciated. To those that say pull yourself up by the boot straps’ none-sense, i hope you realize quick what is going on and that you never have to experience this. Thank you listening.

Yes, I could have gotten a degree in marketing and dedicated my life to selling people crap they don’t need, but, instead I became a librarian and a public school teacher. And any teacher worth his or her weight works way, way more than 40 hours per week and, no, we do not take the summer off. We also purchase most of our supplies. Most teachers have second jobs, especially if they have children. Public School teachers should make a living wage. In the South, except for Florida, teachers do not belong to powerful unions. We become teachers for altruistic reasons. That is just another ideal not valued by a certain segment of our population right now. I will not label them here except to say that the label starts with an R. Collecting a donation to my food bank, NOW.

I'd be digging through the pantry looking for a can of corn or green beans, maybe half an onion etc. Half the can of evaporated milk could be for the cornbread the other half would go into the soup.
My parents and grandparents lived through the depression & rationing of WWII they knew how to put meals on the table to feed the family with very little. Nothing went to waste. They didn't see themselves as poor, they were resourceful. To this day, even though we are financially stable, I have the same mind set. I have tried to pass those skills onto my children and grandchildren.
Recent generations have grown up in times of prosperity & instant gratification. Fast food, 'Buy Now Pay Later', car payments and credit cards are the norm. They have not been taught the skills to 'make due'. When disaster of job losses etc. strike they are not equipped to 'make due'. Videos like yours help to teach those skills. Thank you.

Hard to believe people would be so cruel as to leave hateful comments about people that might need to get food at a food bank. I came from a family that was frugal and we always had a hundred lbs of beans and another hundred of rice, like most financially challenged folks we liked the security of knowing there was beans and rice in the house, everything we made was from scratch, we always had canned food, either canned by us or picked up when it went on sale. it's in people's nature to enjoy trying something new to eat whether their food comes from the store or a food bank, if someone commented that they didn't enjoy the tamal, maybe added some useful criticism that would be understandable I suppose, and easily disregarded by others that wished to try the recipe but to just leave an obnoxious comment to make others feel bad just goes to show how self absorbed they really are, they're lucky if they are so worldly they never need a helping hand

I guess I am old poor. I grew up poor and we ate a lot of soup. One day was meat (with bones in it that my mom made boneless) with some cheap sides. Next day was soup made out of the bones with a variety of ingredients. We ate dinner that way most of my childhood (along with free breakfast and lunch during the school year. Today I volunteer at a food bank and it’s taught me to suspend judgement. You really don’t know what a person’s story is or why they need help. You just have to assume they are there legitimately. For me, I worked my tush off for 40 years to have a decent retirement. I thank God everyday that I have the means to be able to eat every day, pretty much whatever I want. I still have my frugal ways, thanks to being poor. Old habits die hard. I really appreciate that you are trying to help the less fortunate. My only suggestion is to maybe make some cheap soup recipes. Soup is good food and can be so economical.

Good videos most people do not know how to cook good inexpensive meals When my Wife and I were younger we had to feed us and three kids with $100 for 2 weeks Breakfast Lunch and dinner when we shopped we bought what was on sale and when we bought meat we might buy a whole pork loin and one of those bags of 10 lb dark meat chicken quarters then go home cut it all up the pork into pork chops and maybe a small roast or two and the chicken I would go ahead and cut it up portion out into zip lock bags but if you do go to the store have a plan on what you need to work or you will spend to much and of course growing up with two Grandparents who went through the depression helped a lot in learning very creative good meals any way my two cents Great videos and well needed and Food Banks are Great do not be too proud to get help we all need it from time to time

ANGELICA when i was growing up in the 60s. we often had milk toast it was a def gut filler. on little to nothing for a meal. you decide on how much it would take. to feed how ever many ppl u have. so. with butter and flour you make a roux. u til pasty then slowly add milk salt/pepper . keep adding milk for as much as you need to feed. until thick like a sauce. if you want more butter/salt ADD carefully as this is concentrated. then toast bread rip it into pieces, add to sauce, mix well. depends how thick you want this for toast added. thicker =more filling. we still make this during snow storms and make a good sized stock pot of it. you can add nut meg too. its just suppose to be savory. but you do you; ]; ]; ] it def fills you up; ]; ] you could even. mix vegg into it or canned meat for a meal. get creative; ]; ]; ]

You can get at least 2 famous bowl meals with the 1 can or corn. 2 or 3 famous bowl meals with the Mac & cheese. A 26. 7 oz box of Great Value Instant Mashed Potato costs $3. 67 and makes 20 decent size servings. It says you need milk and butter, that’s honestly optional. Everything can be made in the microwave, the potatoes just require a bit of stirring and probably 5 minutes- it did for me. My husband loves them!

Adding a comment to the one I added below. I am a 'white, privileged' senior citizen. We are frugal but food secure. For many years we worked along side campesinos in northern El Salvador. The only families that could feed their children were those who had a son or daughter working in US and who sent money back to them. They worked in deplorable, often dangerous conditions so that they could support their families. Whether with benefit of documentation or not, they deserve our respect. Did then, Do now. We denounce what is happening in this era. Your program today, Angelica, reminds us all of our command to feed the hungry and love our neighbor. Well done, child. I will admit I e been one of those people that did not have to worry about food even in a house that d 6 kids. My dad made ends meet and although we never went to Disney as kids, we never felt left out of anything. As a young adult I was blessed with a very good fed gov job and I never looked at prices when shopping, I just got what I wanted. But now I’m retired and living know that m pension will be very small so I’ve been experimenting either struggle meals to see which ones I do well and that taste good. Able bodied folks volunteer to gather food from restaurants, bakeries, grocery stores, farms, orchards, farmers markets, food production companies ect. and bring it to a gathering place where it is presented by other volunteers so that members can shop in exchange for those volunteer hours. My group charges 8 hours per month. Shopping happens usually on the same day each week. People who can not do physical labor or other reasons are exempt from volunteering and their hours are waived. They will be shopped for, then their food is delivered to them. The person delivering the food earns volunteer hours by doing so. Wood for heating and cooking is also available through gleaners.

I'm a home stay mom with 3 kids my youngest is 22 months and my husband travels for work, we live on paycheck to paycheck. Both of our siblings me and my husband live out of state/city so it just us trying our best to take care of our mothers and family. My mother in-law only has one son, my husband that still lives in the same city while the other two siblings live out of state. She disabled and blind and for my mom my other two siblings live out of the city and she also have health issues. A lot of doctor appointment on top of kimo my mom. We do are best and the meals idea really helps a lot. Thank you for making the time for these types of budget meals.

Thank you! You are amazing. Thank you for sharing. I am what I call a survivalist. I have had to and still do learn to stretch my food dollars just to be able to keep a roof over our heads, for many year, and still do. I am now older and know that I can NEVER retire at this rate. My kids have called me the freeze queen since I freeze a lot of leftovers just to save on food. I recently have been saving chicken bones, in the freezer. When I get a nice amount I put them in the slow cooker and then them cook for at least two days, adding water when needed, to get chicken broth. Then I freeze the broth until I want to use it.

I remember reading mean comments about you sometime ago. alot of cooking shows here are meant to stretch your dollar on meals. and we appreciate them. its me and my daughter but she very picky and doesn't like alot of food i like and vise versa. Alot of meals are made for families and thats great but in turn its too much for me since I consider only myself. ive never been much of a cook. im lazy when it comes to cooking. i like simple things too cook. im like alot of people whose income is low. i still which as its said in today's times i don't know if ill ever be able to actually retire. sad. it is what it is.

Wow! You are an amazing person for posting videos to help those struggling to make ends meet. I grew up in a poor family of 7, but we always had food somehow. Mexican food was inexpensive to make. Sometimes it was just beans and tortillas. My husband and I both went through tough times so I understand how hard it can be to make ends meet. We’re living much more comfortably now thanks to God. We aren’t rich, but we are doing ok now and still budget carefully. My heart goes out to all who are struggling financially. You are doing a wonderful thing here with your budget meals. Keep it up!

Sometimes it was just beans and tortillas. My husband and I both went through tough times so I understand how hard it can be to make ends meet. We’re living much more comfortably now thanks to God. We aren’t rich, but we are doing ok now and still budget carefully. My heart goes out to all who are struggling financially. You are doing a wonderful thing here with your budget meals. Keep it up!

A reminder. Nobody should judge. You don't know their situation. It could be one of these situations and rude comments are ugly and hurtful. Loss of a spouse, weather destruction, physical injury, fire, loss of job, having to pay for a funeral of a loved one, etc. Why do people think people are lazy and just get a job. There are fixed incomes. Mine is so low you wouldn't believe it. (I do fine right now. I use my resources) Don't be embarrassed to use what is available to help you out. So don't judge. You may be unexpectedly finding yourself thrown into a situation needing help.

I've been homeless and I lived off of fish and Crab when I was homeless in San Francisco. I ate fresh vegetables from China Town right after the stores closed they would put out what they didn't sell from free I learned where to get a free hot meal. There's nothing wrong with struggling and survival. I go to the food pantry even today and I help others learn how to survive

When I was growing up my parents taught me that I should be able to look in my pantry and find a meal. Not just during hard economic times but also when there's a blizzard or other emergency event.
I can't comment on the food pantry thing.
But its just a rule of thumb to have canned and/or preserved foods on hand even if you don't use them right away all the time. And the rule has proven itself to me when I haven't had enough to buy fresh or stuck in the house because of a blizzard.

Food banks are a life saver for many struggling families and individuals. Wages are ridiculously low and even those that can work a full time job are having difficulty paying their bills and remaining housed. There are many who have crippling medical conditions and have no one to help them. I am a caregiver and we help people in need. We are also some of the lowest paid and also work to help others in need on a voluntary basis. Your recipes and ideas are incredibly helpful. We love what you are doing!

Food banks are a life saver for many struggling families and individuals. I have almost always kept a fully stocked pantry (just as my mom did) for emergencies and low times. We are now needing to use it. These recipes help use those items that are not so comfortable for me. Thanks. Also, I grew up eating a similar casserole my mom found on the back of some box called tamale pie. Basically, beef chili with cornbread on top. I never thought to use a white chicken chili for it, but now I'm going to need to try it. It looks delicious.

These recipes help use those items that are not so comfortable for me. Thanks. Also, I grew up eating a similar casserole my mom found on the back of some box called tamale pie. Basically, beef chili with cornbread on top. I never thought to use a white chicken chili for it, but now I'm going to need to try it. It looks delicious.
