My parents were born just coming out of the Depression so I learned how to make cheap meals from scratch. We had almost nothing processed in the house - not even a box of mac n cheese. I started fixing this meal at around 13 y/o for my breakfast before school. It kept me full til lunch. Another tip is to bake or boil several potatoes at the beginning of the week, grab one and dice for a quicker meal. This is a hack that came out of the Great Depression, almost always a pot of boiled potatoes on the stove for quick meals.

Growing up this was a breakfast for us twice a week. If we were lucky and had meat like chorizo my mom would make these with chorizo and fresh flour tortillas. My friend and I went to a Mexican restaurant this morning and she had a huge flour tortillas freshly made with papas con huevo and mozzarella cheese. She said it was delicious. Mexican cooking is in my heart and in my blood. Forever thanks to our parents who taught us to cook and pass it forward.

Thanks for showing struggle meals simple & delicious meals on an extreme budget. My grandma lived thru the depression and would call this a fresh depression meal because meals then were canned. But she was able to grow a very humble garden with a small variety of vegetables.
My hubby loves potatoes and eggs with either tapatio sauce or Whataburger's spicy ketchup.

I have made a similar recipe by adding cheese and rolling in a tortilla. If I had it, I’d add onion or maybe a finely sliced bit of bacon. My kids loved it. Oh my. I didn’t think anyone but me saved the extra ketchup and sauce packets from fast food take out. It saves on groceries to use those packets.

I have been eating this since I was a young child. Mama used to make this for us since we didn’t have much money for meat. The only difference was she would fry slivered onions in with the potatoes and then later the eggs. Sometimes we would add dill because she was Polish. Thank you for your videosBlessings

I am Italian and growing up my mom would make this for us, but the difference is she would put a little bit of Pecorino Romano cheese or top after she cooked it! It was an economical meal to feed us, but also traditional to Italian families. Thank you for sharing such easy, affordable, wonderful recipes.

Eat that often since my husband has passed away it’s just me and that’s a quick meal, but I have to have onion in mine and since I always have a piece of Hunt of onion ready for the cutting I’m never without that. I throw onion in there and I do like it with just ketchup, not hot sauce.

My mom used to make this for our family of 9 because eggs and potatoes were super cheap! She paired it along with homemade flour tortillas and made papa con huevos tacos or burritos! Add cheese and some bacon and make it even better! This is now my son's favorite breakfast!

I love to make a small frittata with onion, bell peppers, and frozen french fries and cheese and 4 eggs. It gives me 2 meals when cut in half and sometimes I turn it into a pizza by adding mozzarella cheese and pepperoni to the top. Bacon is good to added in with the rest.

Hi A! I see you take that nasty white part from your eggs. I have been doing that for over 50 years. Really. I just don't like the looks of it. Anyways your meals looks nice and yummy and easy. I would eat them for sure. YUMS. Yes, I like your cooking for 1 recipies. Nice Video.

I just made a similar version yesterday for breakfast. Cubed potatoes and crisped them up. Added diced onion, cracked eggs on top, covered so the eggs would steam. Then served with condiments. I loved your versions too! Such an easy versatile way to use potato and egg.

Personally I leave the peel on the potato and add a large pinch of knorr beef bouillon right after adding the potato to the pan. If I remember to, I'll caramelize about a 1/4 small white onion (julienned) in butter, and add that before the potatoes are finished.

Fry potatoes, onions about 10 minutes, until soft, add 2 eggs, beaten, for each potato. Cook till eggs are done. Onions are optional but really adds flavor. Can add musrooms, spinach, tomatoes, cheese, also. My Dad made this regularly for us in the 50's.

So simple but looks so delicious. I love potatoes too. Sometimes I just fix my husband and I a baked potato and a salad for a meal with maybe some cottage cheese on the side. So tasty! Most definitely share what you fix even for one.

Ah! You have me wanting spring time and gardening. I do that with scallion roots every year. I have some gorgeous monsterous, yet inedible ones that bloom with big white pompoms and spread.

If I don’t have a left over potato in the fridge, I will scrub, chop, and microwave the potato, skin on. Onions are a must. I have a potato in the fridge now and that will be my lunch tomorrow. I like bacon grease too.

I have been cooking this for my wife for many years, she says that she loves the way I cook potatoes. not sure if she's taking a break from cooking LOL but I enjoy cooking for us. just potato n eggs Joe n Christina.

If you take a tortilla, add leftover meat, eggs, rice, potatoes refried beans, and cheese it is a full meal. Use what you have it is different each time I make it. It is a good way to use up bits of leftovers.

My mother made this for my brother when he was a little fellow. Sister and I got stuck with oatmeal at his age. I eat tater egg these days for breakfast, lunch, or dinner. So simple yet so good.

It's also incredibly easy to grow potatoes and if you have a big enough yard you can have chickens, if you're struggling feed the chickens with potato skins and a bit of potato. Not ideal, but it works
