Here is an easy and delicious homemade Tex Mex enchiladas recipe. The easy red enchilada sauce and beefy cheesy goodness will make this a family favorite. This goes great with a side of Mexican rice and charro beans. I have read your comments from my older Tex Mex enchilada recipe and have redone my video. INGREDIENTS 1 lb ground beef (I use 85/15) 1/4 cup diced onions (I grated mine) 2 garlic cloves minced 1/4 tsp to 1/2 tsp ground cumin 1/2 tsp salt pepper to taste 14 to 16 corn tortillas 8 oz block Colby Jack cheese (or 3 to 3 1/2 cups pre-shredded) RED SAUCE INGREDIENTS 1/4 cup oil 4 tbsp all purpose flour 3 tbls chili powder EDIT 2 tbsp for less spice 1/4 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 1 Knorr Chicken buillon cube 2 1/2 cups water EDIT 2 cups water for thicker sauce You can substitute the bullion cube and water with 2 1/2 cups (2 cups broth for thicker sauce) of chicken stock or broth

In High School, I enjoyed the most glorious cheese enchiladas! I have had that taste on my mind ever since. Thank you for your great recipes. I have finally found that flavor I have missed for so many years. That was in a school in Beeville, TX and the lunchroom ladies were the best cooks ever because they were from just across the border. We had those delicious mexican meals about twice a week. Thank you so much for your great recipes.

Im not sure if it depends on the type of dish or not, but please be careful about sitting your hot dish on your stove burners. Its never happened to me but it has to my daughter and my aunt. When they pulled the glass dish from the oven and set it on the cold burner the dish exploded in a million pieces. I always love watching you cook! I will be giving these a try. Im sure they will be awesome! Thanks for sharing.

I'm a San Antonio guy. I love good Tex-Mex and I've eaten at large portion of Mexican restaurants in this town. LOL. That's sayin a lot being that there are hundreds in this city! These my friends are the real deal Tex-Mex enchiladas. I made these about an hour ago and I think that they're probably some of the best I've ever eaten. I'm now officially spoiled. No more restaurant enchiladas for me!

I needed a recipe for some good enchilada sauce for my cheese enchiladas that didn t require me to use the dried whole chili s. I only had powdered ingredients on hand. I watched this video and used your sauce recipe and I m so happy I did. Tastes so delicious! I ve tried other recipes but this one is my new favorite! I love your videos and thank you for making me a rock Star at dinner!

Even better---buy steak like I do and mince it. I use a small food chopper and work in batches. This way I know exactly what my meat consists of, plus I'm able to control the fat and to remove membrane and other parts that resist the chopping process. Not usually less expensive than pre-ground but knowing precisely what I'm eating more than makes up for the extra cost.

Let's be clear the chilly powder is so important only new Mexico chill is the best and another thing that is so important is the freshness of all the spices old cumin and or garlic or anything old can ruin your dish so important, you didn't mention that! I tried this recipe but frankly I personally did not liked the sauce. I found it too salty for my taste. In addition I found it heavy on the chili powder taste. I do enjoy Mexican food, but this one is not for me. Thumbs up, just the same. PS for your viewers, In retro keep in mind that chili powder taste varies from brand to brand. I don't think mine was that good.

Hi I'm 79years old, & you cook like my 1921 Mom did, (she is gone, never forgotten) I'm too fluffy (over-weight) but can not resist good authentic TEX-Mex, San Antonio, Alice, TEXAS eatin was prime! Hello, I love your videos. Your clear calm speaking and the most I live is that your recipes are simple easy to follow with spices and ingredients I use in my kitchen. I dont have to look for foreign spices that I probably won't use again. Yoyr cooking is like my moms. She was from el paso texas and yes so good.

7: 15 This is me the whole time making this sauce! Lol! Your video speed seems to be faster at that part, but I feel as if it's real time when I do this! You really do have to whisk away! That darn sauce is tricky! Easy to burn! It took me a couple of tries. Practice makes perfect!
