Today I am cooking at home and making a pot of pozole rojo. You can make this using pork or chicken. I have both recipes here on YouTube and in my NEW cookbook. With the colder weather on the way, a bowl of homemade pozole is perfect! Ingredients 5. 75-quart pot with lid 3 1/2 L (14 cups) water 2 lbs (907 g) boneless pork shoulder 1 Tbsp (15 g) salt 2 dried bay leaves 1 to 1 1/2 Tbsp (15 g) chicken bouillon powder 1/2 tsp ground cumin salt to taste 1lb 13 oz can white hominy (drained and rinsed) CHILE PUREE 5 guajillo chiles (remove stem and seeds) 1 chile ancho (remove stem and seeds) 1 chile de arbol (remove stem and seeds) 1 cup soaking liquid or broth 2 tsp Mexican oregano 5 cloves of garlic 1/4 of a small onion GARNISHES shredded cabbage onion cherry radish fresh lime juice

Yummm it s almost posole weather here in AZ. Question: do you always use canned hominy or do you ever do fresh? I was taught to do fresh and frankly it s a pain but if there is no difference in taste by using canned, I will be all over that!

I love how delicious and simple all your recipes are. I also think it's so cute how yo use a Korean soup pot to boil the chiles
