Today I am cooking at home and making empanadas de pi a. The filling and the dough are simple. This is a sweet pineapple filled empanada that goes perfect with a cup of coffee. It's baking season and I am here for it! Ingredients DOUGH 3 1/2 to 3 2/3 cup (455 g) all-purpose flour 1/2 tsp salt 1/4 cup (50 g) sugar 1 stick (113 g) salted butter 1 large egg (room temperature) 3/4 cup (177 ml) warm water extra flour for work surface 1 large egg (for egg wash) FILLING (2) 8 oz (227 g) cans of crushed pineapple (juice and all) 3/4 cup (177 ml) water 1 cup (200 g) sugar (or to taste) 1/4 tsp salt 1 tsp Mexican vanilla extract SLURRY 3 Tbsp cornstarch 3 Tbsp cold water Bake 350 F / 176 C for 23 to 25 minutes Cool and set for at least 30 minutes before serving

How do you find inspiration for recipes that you want to post?

I like making mine with shortening because it gives the empanada s more of a brittle cookie texture which I love in contrast to the gooey filling but I did get a couple ideas from this video, gonna add vanilla and corn starch to my pineapple next time I make these

I can not wait to try this with peaches and mango but with store brought pie crust and in my air fryer. I need to spend the least amount of time in the kitchen as possible LOL thank you for the guidance on how to make any variation of your recipes: )

I been making these but never knew what it was called in Spanish basically it a turnover i use apple or peaches yes pineapples Beautiful desert thank you btw your dough is ALWAYS amazing!

Thank you for this recipe. There was a bakery here in Las Cruces that made WONDERFUL pumpkin empanadas, but they closed. I'm going to try making these with pumpkin!

OMG. Yaz, you added salt to the pineapple. Yaz gurl, that's what I would have done. You'd be surprised many would not have, small but it makes a difference.

i'm trying mine with feta cheese and some with chocolate chips aaaaaaaand I'm going to tweak the dough to make some mini calzones or hotpockets.

Hello my husband loves pumpkin instead of pineapple, would I be able to switch it up or would it need to be thicken before putting it in the dough?
