Today I am making my version of that red marinated chicken you get from the Mexican meat markets. I use a blend of ground achiote, which gives it that red color. This marinade can also be used with beef and pork. This is pollo asado my way. Ingredients 2 oz (56 g) ground achiote 1/2 cup (118 ml) fresh sour orange juice 1/4 cup (60 ml) cooking oil 2 1/2 tsp (10 g) salt 1 to 2 cloves of garlic 2 tsp Mexican oregano 1 tsp whole cumin seeds 25 to 30 black pepper corns 2 tsp onion powder 1 to 2 whole cloves (optional) 1/2 tsp coriander seeds (optional) 3 1/2 to 4 lbs of chicken, beef or pork

Love how easy and flexible you describe your recipes. if you don't like this or that, don't use it. if you prefer A over B, go for it Love that red chicken from La Michoacana and now I know how to make my own. Will definitely be trying this!

I would LOVE a tutorial on how to cook the beef used in street tacos! Not ground beef, but the marinaded, flavorful beef.
I moved away from Houston and all those amazing Taquerias a year ago and am missing those tacos!

Thank you! Also, could you please do one with bone marrow? I made a stew and almost all the marrow shrank and fell out of the bones. Maybe I out it in too early or cooked it incorrectly.

Just never orange juice after brushing your teeth, PRO TIP lol
I use Sazon with Achiote cause I can't find it any other way.
