Today I am making rajas con crema y elote. This is fire-roasted poblano pepper stips with fresh corn in a cream sauce. This is great over rice, in tacos or even with pasta. Ingredients 3 to 4 (454 g) poblano peppers 3/4 cup (130 g) fresh corn kernels 1 small onion 1 clove of garlic 2 Tbsp (28 g) unsalted butter 1 tsp chicken bouillon powder 8 oz (227 g) sour cream 4 fl oz (118 ml) heavy cream 4 oz (227 g) Oaxaca cheese salt and pepper to taste

I was going through your videos earlier to get an idea what to make for dinner. I decided to make chicken nuggets. Then I see a new recipe. This looks so good. Thank you so much. Always glad when you upload a new video. I hope they keep coming for a long time. Have you ever tried cesina. So good with the spring onions with the bulb on the bottom or regular onions cooked with green salsa very delicious. Add tortillas and quezo frezco. Yum

We have something slightly similar in Bulgaria, but we fry the peppers with sirene (cheese similar to feta) and eggs. It's far less saucy since no cream and sirene's consistency but it's great still.
Anyway I'm definitely trying this when I have the chance, I've been craving for a new pasta sauce and fried fire roasted peppers of any kind are cheffs kiss

Omg. I just made somwthing like that this week. I stuffed pablanos (after removing the skin and removing seeds ) with fresh oaxaca cheese and made a sour cream sauce with diced tomatoes and chilis. I didn't add corn but I do have three more pablanos with cheese to add to the cream sauce. I am going to sear some corn and add it to the rest I have. I served it over rice but it was good on its own too.

I have only recently discovered this decadent dish. I make it slightly differently, with half-and-half and without the corn, but I like it best in corn tortillas. I think Oaxaca cheese makes this dish! My H E B has recently started selling already-grated Oaxaca cheese, which saves me a trip to the Mexican grocery.

I may or may not have cried on my way home from the store this morning I was so homesick. No serrano's, no poblanos, and no Shiner for my borracho beans. Thanks for sharing, mama! I make creamy spinach pasta with poblanos, but it's always just what I make up. I'll definitely give this a try

Anyone who has an air fryer put your peppers in there set it for 400 degrees for 8 minutes flip over your peppers set it for 400 again for another 8 minutes then leave it steam it in the basket with the air fryer closed for 5 minutes and the skin comes off

Hi A! I liked your recipe today. I will be trying this for sure. Looks so. delicious. I ll put it over spaghetti noodles and add some sliced cooked chicken breasts. Yummy!

Are there other receipes for pablano peppers I grew two plants in a planter and they are full of peppers and blooms. I loved this dish and the chili renos as well.

My mom makes crema de chile poblano. It's a thick soup and adds cubbed panela at the end it's like a creamy broccoli soup but these flavors are even better
