I use a similar recipe but I found these sourdough yeast packs I use instead of traditional yeast and you don t need to keep a starter alive.
I don t use parchment paper, I just lightly flour and shape it again after it s done proofing. I also like to score the top and spritz with water before putting the lid on and putting it in the oven. And then after removing the lid, I spritz with water every 5 minutes to really darken the crust.
For a softer crust, you can still darken it first, just cover with a wringed-out, damp paper towel while it cools and it will be as soft as bread from the store and just as dark.

I love home made bread but I must confess the flour messing around makes me not want to make bread. I learned in high school, but it takes so much time and seems to disappear so fast, leaving you with having to do it all over again. This looks so easy and I think I can handle this! Thing is I have lots of loaf pans but no tops for them and I don't want to invest on all new pans with tops. Is there anything I could put on the tops of the loaf pans? I don't have a covered dish like you have, and I like to make lots of bread when I do make it, so I have some for freezing. Any suggestions, anyone? Thanks in advance!

I can t wait to make this bread! Is there a reason for a plastic bowl used for the rising, or will a stainless, etc. work? Also, if using plastic wrap, does it have to a tight seal on the bowl, or can it be placed loosely over the bowl, or can you place it directly on the dough? Thanks!

No knead. just my speed! ;) Another tip is putting a kitchen towel in dryer for a few minutes before placing over bread, to help it rise. especially in our cold kitchens during these months (I seem to have problem with that anyway)

How about an egg for an egg, for some of that water, or no, Simply Mama. I respect you & know that you know best, dear. I'm just an old woman in Florida. It also adds protein. Love your recipes. Keep a cooking.

I make bread that is my favorite and always make two loaves. I prep it and let it rise all night long, bake in the morning! And I do use a wooden spoon! People should learn how to make bread at home. :)

I make my bread the exact same way. Sometimes I add a 1/2 tsp of garlic powder and onion powder. Wow, what a difference. I also use this same recipe for pizza dough. Maybe with a little olive oil.

And one last thing, I use a GIANT SHOWER CAP to cover my bowl. I rinse it and reuse. I have a few of them! Dollar Tree or 99 Cent store is where you can get them. 2 in a pack I think.
