I do Annie's mac which has a better flavor than Kraft. I use the box's powder with a bit of milk, butter, a dash of honey, olive oil, smoked paprika, onion powder, cayenne, and black pepper. My secret ingredient is a bit of bit of Berbere blend, an Ethiopian spice - it's crazy good and no one can name it (it's really their coriander/ginger that cuts through. When the noodles are cooked I'll add a dry italian seasoning mix and a bit of olive oil, stir and let that rest for about 30 seconds before adding the rue, then add a bit of shredded cheese (I like pepper jack and smoked cheddar, but a generic bag of mexican cheese works. I also add meat to my mac, like shredded pork or chicken (cooked with mexican spices, diced sausage, or ground meat (beef/pork blend) - usually the meat I make spicy. If I'm going to bake it, I'll add panko or fine homemade breadcrums on top.

How do you film so steady-like, no shakiness at all and are still able to use both of your hands while cooking? I hope I phrased that right, lol. Is it a gimbal necklace? Sometime I use a clamp with a 3 foot bendable pole, but I can't move around the kitchen at all while recording. Anyway, this cheesy pie mac hack looks amazing! I love the way you measure the ingredients in this one, and they are certainly nearly perfectly accurate!

I was washing dishes listening and time stopped when I heard you mention egg. I am always looking for mac recipes that use an egg. My personal raising (southern US) and taste - an egg elevates this from a mac purchased as a side or to something rich recalling past memories. I will watch this again and see how to make it w/o the Kraft box as a base. TIA

The best method for boxed is definitely to build the sauce like a roux. You'll be surprised how much bigger you can get the sauce by whisking in the dairy a little at a time over a medium heat, then fold in the pasta.

Use velveeta. you'll be amazed. Make it from scratch its much better. u can also bake it to get a crisper topping. Panko on top.

I add my version, of Cheez it with Saltines crushed with paprika and butter as the topping. Looks awesome Angelica once again!

Biggest argument in my house. I think Mac n cheese should be like lasagna in consistency. Wife/ kids think it should be runny.
