Cook dinner with me, and let's make croquettes. I wanted to utilize pantry items, so I opted for instant mashed potatoes and corn. You definitely can use fresh potatoes, but this made a quick recipe. Ingredients 8oz Instant mashed potatoes 2 3/4 cup hot water 1/4 tsp onion powder 1/4 tsp garlic powder salt and pepper to taste 1 cup mozzarella cheese 1 drained can of corn BATTER/DREDGE 1 large egg 1/2 cup water 2 Tbsp mayo 2/3 cups flour 3 cups Panko bread crumbs Lynne: I personally love the Homestyle mashed potatoes in a pack. They are so convenient when you're in a hurry, or you're just cooking for one. They're also very delicious in my mind. Of course I do add butter and black pepper.

Looks so good. I'm sure they are, but I have a question, please. What might I substitute in place of corn? I can't handle potatoes and corn together. My bs would be through the roof!

I make mine with cooked ground beef and onions in the potatoes, I've never made them with instant potatoes. I like mine with bar-b-que sauce, ketchup, or salsa.
