Looks good. I have three versions of tater salad I make. All different: a Southern style, a NY style, and a warm German bacon, vinegar & sugar version done in a skillet.
Your recipe is very close to my Mama's Southern style tater salad. I haven't ever put olives green (or black, celery or green onion in mine though they sound like a good addition. I too put some yellow mustard in mine but only about a tsp but then I'm only making enough for 2 people these days not a crowd like when we were growing up and mama was making it for 5 people.

If memory serves, the addition of mustard to dishes/dressings/sauces that include mayonnaise is a historical one. In the past, mayo was made from scratch using raw egg yolks. The addition of mustard or mustard seeds (also vinegar) helped to stave off bacteria (namely salmonella) found in raw egg yolks. The mustard compound is called allyl isothiocyanate. Today mayo is produced to be safe for longer storage.
Potato salad with and without mustard is awesome.

Its fun seeing how everyone makes a Summer bbq staple. I love mustard potato salad but for as long as I can remember ( I am 71) my family has used French dressing and mayo ( or miracle whip) in our potato salad. Eggs, onions, celery salt ( I am allergic to raw celery) and pickles or pickle relish. I think I would like to add the green olives to ours.

Hi A! In all my 43 married years I have never cooked with MUSTARD. My dear husband hated it. I liked it on my hot dogs and bologna samis. I never tried potato salad with mustard in it. Altho my Love is now gone I still don't think I would put that or olives in any salad. Everyone has there own way of eating I suppose. Nice Video.

I know it might sound crazy, but I keep potato salad year round in my fridge. I'm the only one who likes it in my house. but I don't just have it as a side. I put it on my sandwiches. It's so good. I'm addicted thank you for this recipe. I love your videos and I love hearing happy kiddos in the background

That s the way I make it minus olive and red pepper, which I want to try. I love potato salad, just about any way. Looks good and making me hungry. My husband doesn t like it, so I seldom make it just for myself. Going to try your version this weekend. Thanks

So I keep hearing from people that kewpie Mayo tastes the same as miracle- whip I d love to see someone, ie you, teehee, do a taste test to show how incorrect or possibly correct this theory is are you interested or have you done it and your over it? Lol

When I was a kid, I used to think potato salad was a Mexican side dish because my mom would always call it Ensalada de Papa, but it's German. And, every time we had a bbq we would have meat, Ensalada de Papa, rice and beans.

I put about a tablespoon of white vinegar in the water when I make hard-boiled eggs. When I peel them I run them under cold water and the shells come off easily.

I make my potato salad like you do, except I don t add bell pepper. I do add bread & butter pickles and cucumber ranch dressing too.
