Today I am making mini lunchbox tres leches cakes. This is great for a homemade dessert or a great way to start a side hustle home-baked business. The use of baking tins with lids makes this cake easy to package.
Ingredients
1/2 cup plus 2 Tbsp all-purpose flour
1 tsp baking powder
1/2 tsp salt
3 large eggs (separated)
3 Tbsp evaporated milk
1/2 cup sugar
1 tsp vanilla extract
1 Tbsp cooking oil
4 six by four-inch baking tins
3 milks ingredients
10 fl oz evaporated milk
1/4 heavy cream
1/4 cup sweetened condensed milk (or to taste)
1/8 tsp ground cinnamon
1 tsp vanilla extract
3 drops orange extract (optional)
Topping
1 1/2 cups whipping cream
2 Tbsp confectioner's sugar
2DirtyDogs: Add a little instant vanilla pudding mix to the whipped cream mixture to stabilize it. It will last MUCH longer. Whenever I make tres leches cake, I always get requests for take home portions. This is a GREAT way to make extra so that you get all the leftovers for yourself and still have enough pa' llevar!
