Today I am making a subscriber-requested recipe of albondigas en caldillo or Mexican meatball soup. This Mexican-style soup is a family favorite and tastes even better the next day. Meatball ingredients 1 lb lean ground beef 1/2 cup uncooked rice 1/2 tsp onion powder 1/2 tsp garlic powder 1 tsp salt 1 large egg Puree ingredients 1 Roma tomato 2 garlic cloves 1 guajillo chile 1 cup water 2 Tbsp beef bouillon powder 1/2 tsp cumin seeds 1/2 tsp cracked black pepper 1/2 tsp dried oregano Soup ingredients 1/2 small onion 1 celery stock 1 large carrot 1 1/2 lb potatoes 2 Mexican squash 1 dried bay leaf 6 cups water salt to taste

My old BFs mother use to cook a huge cauldron of this. She'd add onions in the pot too. A sprig of fresh cilantro after plating. She offered lime juice and heated tortillas. My bf scooped with them after drinking the liquid. Reminds me of eating fajitas. Lol. He was born in the Solare/ mid way between downtown TJ and the Playas up on the hill. If you have ever been to TJ. This was so long ago that Otay border crossing was a trickle. I'd drive up another hill to bypass sitting for hours to go a longer way but way faster. Then it was at most 5 min but usually just slow down and you were waved through if you drove a regular vehicle. Well for the most part. Lol. I dated a guy before him that owned 2 car dealerships there. Boy oh boy. even adults are mommy whipped. She didn't like a Guadita dating her son. Lol. We stayed friends though. Mainly because we helped each other in business. I worked in Auto auctions in California.

Hate to say it but these aren t half teaspoons you re adding, more like half TABLESPOON. Please be aware of spice measurements because others may not realize this. If following this video by your measurements alone, the dish would come out very under seasoned. There s a big difference between a tablespoon and a teaspoon.

This looks really good. Saved in my soup file for when the weather gets cooler. I have a question. I cannot eat red meat. Have you ever made the meatballs with ground chicken on ground turkey? If so how did you like them. This soup is one of my favorites. Thanks for posting. Have a great day!

Mmm i love caldo but my family hates that i make it often lol im from the coachella valley and it gets to be 120 out here, and you know when you make caldo, thats all were eating for the next 3 days for breakfast lunch and dinner

I wish I could make this tonight! I have been trying to figure out something different to do with my pound of hamburger for dinner. I have everything except a tomato and the guajillo pepper. Wonder what I could substitute.

I will be giving this recipe a try, only with chicken stock since I have 5 quarts of it in the fridge. Perhaps it won't be authentic but I'm sure it'll turn out good.

Another question not related to this really. but when you roast peppers can you do them a day before? A lot of recipes call for the charred peppers. they take me too much time and I get flustered

AGAIN, dear lady! My mom made it just like you do, I loved it with corn added. Albondigas would be perfect on still-chilly Vermont nights here this week. And, now, I'm hungry. Haha

I m one of the people who has the genetic disorder of tasting soap when eating cilantro. I really wish I didn t, I have no idea how cilantro actually tastes to normal people

I need to find Mexican squash to try in soup. I love soup but always assumed squash in soup would be mushy. Ewww! I m guessing Mexican squash has a firmer texture? Correct?

I love Albondigas. my problem making it is that my meatballs always taste chunky. not like smooth I even once blended my meat umm no. I will give yours ago

Saw this thumbnail and made meatloaf sandwiches. Now I m back to watch and this looks so good! I ll have to try, meatloaf is one of my faves.
