Here is another one of my favorite summer salads. This is my ultimate tuna salad that I love to make sandwiches with or eat with crackers. This is gonna be good! INGREDIENTS 2 cans of tuna 2 boiled large eggs 1/2 mayo or maybe more 1 medium carrot 1/4 small bell pepper small piece of onion 1 celery stick 2 Tbsp sweet pickle relish 1/2 tsp crushed red pepper flakes 1/4 tsp lemon pepper salt & pepper to taste Jennifer: OMG! I have never seen anyone else who likes tuna salad on crackers! I make it and put a little relish on top instead of mixed in because others don't like it. But I will eat this as a snack, lunch, dinner with some soup or a side salad. Now I'm gonna have to make some tuna salad

That loks delicious! I like the idea of the carrots & bell pepper. When I buy tuna I keep the cans in the fridge so it's cold when I'm ready to make tuna salad.
I tend to mash & shred my tuna to basically confetti. Then add diced celery (strings removed, mayo, lemon juice, s & p, fresh or dried dill weed and sweet pickle relish-hot & sweet is good if you can find it. If I get tired of sandwiches, I'll cook some elbow mac & make tuna pasta salad.

Looks delicious! Thank you for sharing your wonderful recipes with us. I love tuna and it's a good source of protein. The banana peppers look like a great addition. Have a blessed and beautiful day.

I love these cool salad recipes you've been posting for summer. We've already had some warm days this year and cooking or even eating something hot has been the LAST thing on my mind.

I love adding chopped pickles and sliced or chopped apple to my tuna. So good in my opinion apple and tuna goes together like peanut butter and jelly

I don't slways add the red pepper flakes and depending on my mood I sometimes use Miracle Whip instead of Mayo. Yum! It is so good.
