Here is an easy, budget-friendly dinner recipe that feeds four. Beef vegetable soup is so easy and quick to make, which is perfect for a weeknight meal. You can add the vegetables you prefer and make it heartier. INGREDIENTS 1 lb lean ground beef 4 small to medium potatoes 10 oz bag mixed vegetables 3 (14. 5 oz) cans of beef broth 15 oz can of crushed tomatoes 1/2 small onion 1 celery stick 1 dried bay leaf salt and pepper to taste CORNBREAD Ingredients 1 pkg Jiffy cornbread mix 1 large egg 1/3 cup to 1/2 cup buttermilk 2 Tbsp chopped pickled jalape os 4 to 6 oz cheddar cheese of your choice 2 Tbsp softened butter for baking pan

Looks absolutely delicious! Love the addition of the cornbread& choice of buttermilk. yum! I never made beef vegetable soup until a few years ago. now it's a constant. So hearty & filling. Learned a trick from a friend. add a bit of crushed fennel seed & smoked paprika. It gives more depth.
The next cool day this will be on the menu along with the cornbread! Thanx for the inspiration Simply Mama

simplymamacooks Great recipe and the flavor profile looks super. Suggestion: You might like to consider searing and browning the meat, first, in your regular cast iron skillet. Enameled cast iron is unable to produce perfectly browned meat. Bet your family loved that recipe.

This looks awesome, I do a LOT of canning, so I can both stock and ground beef, so I make something a lot like this, home canned stock and beef then frozen vegetables, generally don't have the potatoes but pretty much everything else.

Hi A! Your soup looks tasty. I never had any soup with ground meat in it. Except if you consider Chili a soup. It looks really yummy. The cornbread looks delicious. Im going to look for that smoky cheese. Nice Video.

Showed up for the cornbread, and I have zero complaints With the Jiffy mix. None what so ever. You should do a segment on Jiffy cornbread mix and different styles and additives.

My husband grew up eating soup like this, he considers it comfort food.

This soup is one of my favorites. I make it pretty much the same except I add a dash or six of Tabasco before I simmer. The cornbread looks delicious, I'll be trying that.

I could cry! My grandma made this all the time. she would add cabbage and it was amazing! We used to do cornbread and corn tortillas with cheese! Thank you for sharing

I had homemade chili with cornbread for dinner. I've been crumbling cornbread into chili, soups, and goulash since I was a kid. It's the best!
