One year I made this for my family which consists of six kids and my husband. I did not use the cheddar cheese but I did use the cream of mushroom soup in the Velveeta. Anyway semicolon my kids absolutely went crazy for it, and we've had to have it on our Thanksgiving table ever since. They're all grown now so this was quite a while ago. I didn't want it to be that popular. I just wanted to try something new for once

We make a chili Colorado tamale bake that is so good! You make masa how you would for tamales, spread it in an oiled 8x10 pan then add chili Colorado, reserving some of its sauce. Add a last layer of masa, cover and bake at 300 for 45-1hour. Uncover and cover with remaining sauce and some cheese and put back in until cheese is melted or browned to preference. Let sit for 10 minutes and then cut and serve

Mine is Green chicken enchiladas. I cut & mild fry 20 corn tortillas, add 3 cans cream of chicken, 1 can water or milk, add shredded monteray jack cheese, 1-2 can diced ortega green chili mild or hot your prefetence, shredded chicken put in oven dish add shredded monteray jack on top bake 400 or until golden brown topping. enjoy!

My absolute all-time favorite dish on thanksgiving, is the cornbread dressing. Yum! Actually I used to make it from scratch using cornbread and white bread, but now I kind of gotten lazy and I go for the Pepperidge Farm bread that's in the bag. But I could just eat that for Thanksgiving and be perfectly happy.

My husband makes a chicken broccoli rice casserole similar to this, and he'll sometimes throw in some spinach for a little extra veghies. So good, and leftover portions go into the freezer for lunches at work.

We always have green bean casserole at the holidays. But I love au gratin potatoes, scalloped potatoes, corn casserole, and cabbage casserole. My Mom always made them.

Yum! What can I substitute for the canned soup and velveeta? I don t care about fat content or calories, but I do try to limit ultra processed foods
