Marc, its great to see you visiting all the spectacular and ancient cities, monasteries and the Cedars of Lebanon. I had done the same when I was studying in Beirut. I just would like to add couple of interesting facts that I learned at a cultural expo in Genoa, Italy. an expo that demystified all our biases. take coffee for example. we keep calling it Turkish when in reality, coffee has absolutely nothing to do with Turkey or Italy, another country we associate coffee with. Do you know who introduced coffee to the world? The Arabs. The city of Moka is in Yemen, where the Arabs discovered it across the Arabian Sea in Ethiopia, Africa. They took it and perfected the harvesting of coffee, hence the label Arabica. The Turks learned and adopted the food of the Arab world when they arrived from Central Asia and served the Caliphs. when the caliphs of the different Arab dynasties were waging wars against each other, the Turks seized the opportunity and they turned against their masters and occupied the entire Arab world. With that, they took everything from food to architecture, from the Levant countries, North Africa. etc. when the Ottomans started invading Europe, they brought with them the coffee they had learned how to drink in the Arab world, hence the appellation Turkish coffee. words like coffee, rice, Lukum, sorbet, artichokes, orange, lemon, vines all were brought to us by the Phoenicians and later the Arabs. all those words take their root not from Greek or Latin but from Aramaic and Arabic. these things are deliberately not taught in our western schools in order to justify our western and cultural hegemony and superiority. Read Sanford Holst (an MIT scholar ) and his work on the splendor of the Ancient world and the Phoenician Secrets. They taught the Greeks so many things and founded the Minoan civilization of Crete. Not to mention Malta, Sicily, Sardinia, The Spanish coastal towns. Have you visited Tyre, the birth place of Europa and Carthage? Its a must. Greetings from Norway, the land of the midnight sun

Lebanon trip series. One of your best travel food series ever. Never crossed my mind traveling to Lebanon, was ignorant of what a beautiful place, mind blowing food, the people, the culture and the history so rich and ancient beyond my understanding. Herrings, sprats, sardines and whitebait. These all belong to the same family herrings are the largest; sprats and sardines in the middle; and whitebait are tiny little fish that are eaten whole. You ate whitebait not sardines.

so much oil Mark but I am guilty of that to. I live in San Blas Mexico and we use alot of lard. even on sea food Wich is plentyfull here. we have great and unusual food here. we would love to see you here.
