Fadi has truly perfected the art of roasting a whole lamb bbq, from the way he cuts and skewers it, to the marinade, to the roasting technique, to perhaps the most genius of all - how he chops it up with spices, mixing and matching meat with fat, and feeds it to you #Lebanon #LebaneseFood #bbq It all began at Taanayel Ecolodge one beautiful afternoon. We started with the whole fresh lamb, where Fadi began making cuts to hold in the marinade and so the roast would be even. One of the most unique parts of this experience was having Fadi slice up the raw testicles, and eating them in a bit with sweet pepper and mint. Marinade - The marinade was a combination of yogurt and spices, including lots of sumac, and not totally sure what else. He rubbed lemon and the marinade all over the lamb before covering it in foil and lighting the fire. Fade mentioned to me that the secret was in the hand roasting of the lamb - not using a machine to roast evenly - he said a lamb is not even, so you need a human to roast and turn to even out areas that need more heat and less heat. Hes mastered it. Hours later, the meat was caramelized, yet juicy and tender on the inside. Probably the most interesting, unique and amazing technique is when the lamb is ready, he slices of strategic part of the lamb, including mixtures of meat and fat, and chops them together, mixes with lemon juice, sumac, salt, and pepper, wraps each bite of meat in bread, and feeds you. Fadi told me hes even fed the President of Lebanon It was truly some of the best single bites of meat Ive ever had in my life. Unbelievable combinations, spices, and flavors. It was a once in a life-time bbq whole lamb experience

My family and I had the good fortune to share a Christmas dinner in Abu Dhabi with a Lebanese family and their guests. The main course was a whole roast lamb that was cooked at a local Lebanese restaurant and served on a bed of rice along with various other Lebanese accompaniments. First the women and children were fed. Then the men rolled up their sleeves and tore pieces of meat off the lamb with their bare hands and ate until there was nothing left. It was one of the most memorable feasts that I have ever had.

Again the display of a animal carcass made it inappropriate for grandkids. There is a lot of great cultural history you teach about the world and you make all sorts of places more familiar to your viewers. But you seemed to have made it through France without showing the rendering of a horse, Korea without dog slaughter so what do you have with ovine carcass?

Do you know what prions are Mark? Because thats how you get prions. They eat holes in your brain. Its NOT that rare, I literally knew a woman who died from it and I live in the middle of super safe food. Search it and stop doing that, we want to be able to keep watching your videos and you cant do that if your brain melts. Dont eat spinal stuff.

It's a lot more communal drinking out of a jug this way you don't get any germs. literally eats from people's ungloved hands, double dips, shares the same utensils and takes bites out other people's half eaten wraps and sandwiches on every episode.

I always wonder how much of the original marinade actually goes into the final taste. I would assume most of it is either burned or evaporated. on the other hand the slow heating wrapped up in the beginning may help the marinade to actually go into the meat.

Raw testicles just yacky. And then lamb was wrapped in aluminum foil and then without removing that foil they chopped and cut it and eat it. And Mark give same expression to every food. Whether it is plane water.

After seeing this series of Lebanon, I want to visit that beautiful nation. The food is now a secondary reason to visit it. The land and the people are good enough reason to visit. Thank you Mark.

OMG Def gonna grill some lamb(not a whole one) tonite AND try my best to season it the way the chef did BCUZ THAT looked soooo AMAZING DELICIOUS LOL
