One of the best Thai dishes ever is Khao Kluk Kapi, at least I think so. You can read all about the details here: Ok, so Khao Kluk Kapi ) is common in Thailand, but at the same time it can be hard to find at restaurants. It's more of a Thai dish that's served as takeaway from markets and shops around Bangkok, but it's rarely served as a sit down meal or at street stalls. The reason, I'm actually not so sure, because it's truly one of the world's greatest dishes. But there are a few streets stall in Bangkok serving Khao Kluk Kapi, one of them located pretty close to Khao San road, known as Khao Kluk Kapi Niyngow. So the dish begins with rice, but it's not just plain rice, it's rice that's first stir fried up with some kaphi, or fermented shrimp paste. This doesn't over power the rice, but simply gives it a nice shrimp flavor without it being overpowering. The next step is to add the variety of fresh and cooked ingredients on to the top of the rice. The is the assembling process, and though it's simple, so many places get it wrong. The main issue is to ensure that the ingredients are fresh and go well together. Khao kluk kapi ) toppings include sour green mango, string beans, cucumber, shallots, dry shrimp, sweetened pork, Chinese sausage, slices of an egg omelet, both roasted and fresh chilies, and finally a squeeze of lime to complete the spectrum of flavors. So khao kluk kapi ) is one of my all-time favorite Thai dishes mainly because it includes such a diversity of fresh ingredients on a single plate. It's such an explosion of extremes in every single bite. Hey Meer, thank you for your concern. Overall, pork is a red meat, similar to other red meat - and red meat is not always the healthiest in large portions or if it's too fatty - but in proper portions it can add great flavor to a meal (any red meat. However, though this dish is common with pork in Thailand, it could be good with fish or chicken too

I love watching your videos, though I do think you could change up your reaction face now and then. If it is the same every time then we don't get a true feel of the level of your enjoyment with each dish. Does that make sense? It'st just propaganda. Pork is a lean type of meat who is full of healthy proteins. Dont belive everything you read on the internet. Pork been a source of proteins for 1000 of years, has it been a probleme yet? dont jump on the everything is unhealthy hype.

Hey Bobby, yes the rice is a little moist, but the dressing is mostly just some juice from the pork, and squeeze of lime. I guess it's a little dry, somewhat like a plate of fried rice, but I think because of all the fresh vegetables it doesn't seem too dry.

hey mark, love your videos. whenever i'm in bangkok i think i get stuck with eating the touristy variants of food - guess the language barrier stops me from venturing to see how the locals eat.

I love anything kapi Mark, have you tried nam khao? I think it's more of a Lao dish but I'm pretty certain Thais eat it as well. Maybe Ying can make it for us one of these days? Hint hint.
