Chef Diego P-rez Turner owns one of the best breakfast places in Mexico City-Fresco by Diego-as well as Temporal, a restaurant that changes everything from their menus to their uniforms every three months in the hopes of never getting stuck in the same grind. For this How To, Diego shows us how to prepare the best marlin tostadas for the morning after cruda. These tostadas have helped tons of Mexican cool kids get over brutal tequila and mezcal hangovers. I bet that's good! I'm simple when it comes to tostadas, you get yourself a tostada shell, get your refried beans on there, place chopped lettuce over beans, diced tomatoes go on top of lettuce, you then top it off with shredded cheese and pato sauce and you're good to go. I've also had ceviche mayo tostadas, great for munchies.

First he cuts the tomatoes in a way so you don't get a big piece in your mouth and it won't look foolish, then he makes something that will make a huge mess so you'll look foolish anyway.

Very Mexican of him to make sounds effects as he cooks, both my parents do the same. Oh how do I know he's Mexican? Because of his accent, and he is from D. F to be exact.

way too much cilantro. But thats a matter of taste I suppose. I just cant stomach it. I really with that I could. So many great dishes have it and I just loath it unfortunately.

Throwing away tomato cores is a crime against humanity. I really hope he reused them in a soup or something similar, the core of a tomato is where all the flavor is.

Salpicon is made with boiled meat that is then shattered in string like pieces. Forgot to add the queso fresco. Everything else was correct.
