Love Tom and Ariana but SUR clearly isn't successful because of a killer cocktail program. What exactly is the measure of. 7 ounces doing on a cocktail spec and how on earth are you accurate enough to a pour a. 7 and not a. 75? And shouldn't it be. 75 seeing as pretty much every American cocktail program measures to the quarter of the ounce? Free pouring to the tenth of an ounce is not a thing one can do 100% consistently no matter how much practice they've had. Not saying you can't come close but to a trained eye I would say this doesn't appear to be a polished cocktail program. --Also macerating citrus wedges with that much force unwittingly adds a lot of unwanted bitterness because you're digging into the pith of the citrus. Tom says -it incorporates the oils- but a better way to do this is to add the citrus juice and then use a peeler to add a citrus to peel that gets shaken with the cocktail. That way you can still have the zest of the peel come through wihout it being overly bitter because you didn't apply full force with a muddle. --These may seem like very small gripes but as someone that does this for a living it is painful to see videos like this and know that people who don't work in the industry take it as gospel and have no idea how wrong this is. Really? These two are idiots playing trendy bartender at best. You guys usually do a pretty good job of finding people who are passionate about what they do, these two are only passionate about fluffing their own vanity, and pretending like they have a skill set. Might as well be watching MSNBC.

What's with the basic errors, never shake before you prep your glass. The cocktail will keep continue reducing and dilute the flavour. Also, you're meant to fine strain anything with fruit, otherwise particles enter the final cocktail.

I'm confused why he dissed the term -mixology-, unless I misunderstood and he's complimenting it (pretty sure he's not) I'm sure it's the official term. Sounds like he's just pissed because he's to shit to live up to the title of a mixologist.

I loved this video and I love these two! My good looking 22 yr old son is bartending, also acts, writes music and of course sings and also wants to work at SUR. He'd be an excellent addition to this great group of people!
