All The Tacos is back! In this episode Francisco G-mez heads to Tabasco, Mexico to try the Pejelagarto taco, made with garfish (pejelagarto, a prehistoric fish that looks like a small alligator. Francisco travels to Dos Montes, Punto Ceiba, and Villahermosa to catch his own garfish and learn the many ways to cook and serve the fish. Only thing that aggravates me about this dude is the way he holds a taco. I-m not sure why. I hold a taco like 99. 9% of people and it-s never done me wrong. It-s extra and I hate it for no particular reason.

I live in central Virginia near The James River. I spend a lot of time on The James and I-ve seen gar 5-6 feet long ever summer. Great fishing! Fun fact: I catch them with a piece of rope instead of a hook.

I love the Mexican culture, so laid back. The first time I visited Los Cabos, the driver met me at the airport with a cooler full of beers. That is when I new I would love it there.
