I don't know why they need the water bath. Didn't really explain, other than the the N20 would probably cool the eggs down too much. It'd be good too, instead of cheese and prosciutto on top, but maple and bacon. Like one of those maple long johns with a strip of crispy bacon on top. Or just sausage gravy on top, like frosting. Orrr.
