Question: is there any real advantage for the chinese knife, or is it just keeping with tradition? I usually like smaller but extremely sharp knives for vegetables, like 6- santokus or usubas, I think you can get more control with them, but I'm open minded. So if anyone can explain to me what the chinese -cleaver- is about. -(btw, I know -cleaver- is a terrible misnomer)

The fear of lard comes from the health myth that spread throughout the latter half of 20th century America that fat was bad for the heart. Lard is an animal fat so people assume it's all saturated fat, even though most pork fat is unsaturated. We know now that not even saturated fat is particularly bad for you, but of course old habits die hard.

Thanks so much for this delicious looking recipe and video Chef Sze! The technique of using both hot and room-temp water is interesting to me, I've never seen that before. I've only seen all hot water. Please could you explain the benefits of your recommendation for the dough?

Lard should make a comeback? Riiiiiiiiiiiight cause you know, heart disease isn-t the number one killer in America. I think in addition to everything else ppl stuff in their face hole a lard comeback would be no bueno.

I know he is incredibly knowledgeable about his recipes and I-m not questioning that. But the way he describes it. He sounds like a 5 year old describing some really weird concoction he just made to his mom. Lol

it looks good but i cant get over the fact that he pressed the meat down with his thumbs ewwwwww. every time i eat it im just gonna see that image. his thumbs in my beef lol.

Im going to make this, on Friday this looks awesome just gonna get all the ingredience. I will be replacing chilli oil with my own home made scotch bonet oil.
