Some of his words seem doubtful. An experience chef who had did the same dish for more than dozen times, his muscle would regconise the quantity each ingredient required without that electronic weight. And I am not sure a sauce that can simply substitute by ketchup really gonna takes 3 days straight to make. At least I don't believe he make that sauce himself since he does not seem confidence about the details of making that sauce.

Here's how you make omurice. You cook the rice in this sauce. Where did the sauce come from? Who knows. Don't worry, you don't need to know how the demi-glace is made. But it took three f'ing days to make. ---Oh and lets completely over expose the eggs when they're cooking so no one can see what he's doing in the frying pan. ---Great.

Important steps: touch spoon to raw chicken and put chicken spoon in remaining onion to add chicken flavor. --Use same knife to cut raw chicken and cooked egg. More chicken flavor. --Finally serve on raw chicken board for aromatic purposes.

Is it traditional Demiglace sauce that take 3 days to cook? -That is why it take time to get the base sauce to create his homemade demiglace sauce for the Umurice?

every time I try making this kind of omelette I get yelled at for all the banging while I'm making the eggs =D. one day I'll get the hang of it, really I will!

if you don't have this homemade 3 day reduced sauce, you can just use store bought ketchup, if that aint the most Ina Garten shit I ever heard wow lol
