I'm an American from Chi and my parents are from Ireland. As good as some of the food from Ireland is, and as great as the food is here in Chicago, I think Caribbean food is the best on the planet. --Also: Def keep the Chef Kwame videos coming, he's awesome, his instructions are always easy to follow and his recipes are always delicious.

Excellent job of getting your ideas and thoughts across, I'm a 58 year old Scot Canadian and I actually believe that I can make this dish, right now! -The dish looks superb and I cannot wait to taste it. -You should have your own show, man.

We make the same thing in Guyana, the only exception is we usually cut the meat into smaller chunks so it browns more evenly, and we have big families so cutting the meat into smaller a bits ensures everyone get a bite lol.

- -Shouldn't put the browning or ketchup or sugar on it to marinate. The sugar in these these ingredients will make the chicken to be burnt. Add the browning, ketchup and sugar ONLY when it's cooking down. - -

If that's Caribbean stew, then my dog's an expert chef. Watched her cough something up on the floor last night that looked EXACTLY like that. Made from scratch, with fresh ingredients. My dog is so talented.

I am marinating the chicken now! I don't have any ginger or peri peri. So I threw some fish sauce in with the Worcestershire sauce and some Sambal Chili paste in for heat! let's see how this turns out!

I just made this and I was friggin delicious! I just wish they had put all the measurements in the video or at least in the description it would've been so much simpler to follow. Thanks chef!

I am from Jamaica and this definitely not how stewed chicken is made. I was so confused. My suggestion is to call your dish another name and stop saying its Caribbean/Jamaican.

The -munchie- in the thumbnail looks like poop coming from a person who swallows alot and doesn't chew. Just some humor btw I'm not insulting the other cultural foods.

dude the whole thing with cooking shows is the cooker has to show no fear. and this guy just sounds like he knows exactly what he's doing so you just roll with it
