Farideh s take on koobideh involves grated onions, 80/20 ground beef, citrusy sumac, and a little baking soda to help tenderize the meat. Farideh you are awesome, and always entertain me with your food and more so your sense of humour, so I want to stop you from crying. by suggesting that you run the cold water from your tap/faucet while you're cutting your onions. I used to get tears streaming down my face while cutting them, and after a few times of trying that, it basically stopped me from tearing up even without having to run the water.
Anyway, keep up your amazing content and all the best for everything you have going on

My secret ingredient for burgers is grated onion. Just a quarter. But I never thought to squeeze out the juice. I do it with the theory that it makes the meat super moist with a delightful background aroma that you can't quite place.

I used to slice 50lb bags of onions and wouldn t tear up as much. But that s what squeezing out all that sulfide will do.
Gelatin works better than baking soda in keeping ground meat tender and juicy, also.

So happy that Farideh is doing another Iranian recipe. I like to add an egg and turmeric to my kabob koobideh. I also save the onion water to help apply the meat to the skewers in between each skewering.

But dear sweet angel Farideh, isn't this recipe more close to koftas instead of kebabs? I know kebabs are traditionally skewered and kofta not so much. Should them be called kofta kebabs?

This is very similar to Iraqi Kabab, I miss it so much, I wish I could put the skewers in the over, but then it won't have the grilling flavor which is really good

Anyone else immediately want to throw Tzatziki sauce on this. Just feels like cucumber sauce would be perfect on this. Good job on this Farideh

You know if you run an onion under cold water while chopping/grating it will remove the chemical irritant so you wont cry. Fun Fact!

I ve never been to Iran but I once had those kebabs at an Iranian restaurant in Dubai and they were incredibly delicious!
