Eleodoro Lopez is the chef and owner of Elio s Wood Fire Pizza, a Neapolitan-style pizza food truck that serves gourmet wood-fired pies on the streets of Los Angeles. In a street food market saturated by tacos, Eleodoro had the idea to stand out by serving the food he knows well, based on his background working in Italian fine dining and bakeries. Eleodoro, who comes from Guatemala and began his culinary career in Mexico, made his way to California to find a better life for himself and his family. He began to find success with his wood-fired street food pizzas, using only the finest Italian ingredients like San Marzano tomatoes and 00 flour. He serves his pies with arugula, prosciutto, burrata, pepperoni, calabrian chilies, and more. Riccardo: man as an italian that pizza looks legit, but the price is quite high, but think its not made in italy but in LA i think maybe its fair. i think this is the first time i see a pizza made in the us that looks good

Serious credit to LA for not shutting him down. Try that in my city and the cops would be on you in minutes writing as many tickets as they could. You'd easily be looking at hundreds in fines. Do it a second time and you'd be looking at criminal charges and probation, along with hundreds in fines. Food trucks in my city have to have a half dozen permits, can only park in three spots in the city (for about 200 per month and two of which are empty at night) and all prep has to be done in a commercial kitchen. You have to be at least 100 feet from a public road so forget setting up in a friend's parking lot. After permits, insurance and renting prep space in a commercial kitchen a food truck will cost you at least 1k per month.
What Eleodoro is doing is America at her best. If he's not a US citizen I really hope he does become one.

I remember watching his episode on Insider. It looks like his business has grown! My mom is from Honduras & her story of coming to this country is intense. That double border crossing is no joke. Thank you guys for shedding some light on his personal story. Munchies needs to bring back the Pizza Show, just so Frank Pinello can interview this guy.
