I just tried brining chicken for the 1st time. It lived up to it's reputation. The chicken was super moist. The only thing is to hold back on salt when you cook it because it's already in the meat
Use a ricer for the potatoes. Maybe sour cream instead of milk. One thing I've read about but haven't tried is adding a touch of mayonaise to the mashed potatoes.

Never use water to make collards use chicken stock. Triple up the amount of onions he used and always use a smoked turkey leg. I don't even have to taste these greens they ain't that good. I guarantee you that.
