My wife and I bake her sourdough bread in the earthen oven (made of clay, sand and straw, in the forest beside the log cabin. This was before I figured out the heat issues with the clay oven, so we baked four loaves - two 50% wholewheat and 50% white flour and two 100% whole wheat - by keeping the wooden door open and feeding the fire to keep it burning hot enough to get the inside temperature up around 500 degrees. Shawn, for a bread oven you need to use refractory brick or stone. The cob dome and sole are not adequate for high heat baking. You need a decreasing heat from 260C for bread.

how do you keep the sourdough starter warm? you must get a new SS going for your breadmaking as opposed to keeping one going.

as a french, this bread is calling country bread(pain de campagne)as a shepperd we make the same in ours mountains, very nice video!

Just a note on being prepared. have you considered a HAM radio (need license? You don't always have to rely on cell phone service.
