we move even further off-grid to chase down waterfowl. Birds are a welcome change to eating just beaver and bear meat. We collect a couple as we paddle out to our new camp spot in an area completely unknown to me. We also hope for some fish and other small items like grouse. Beaver are surprisingly easy to trap and offer a ton of nutrients to the forager. A real staple item! Beaver is also great eating, usually very full of fats crucial to surviving long term in the wild

Guy's, that Bear meat makes me hungry! Yum! OK, here is the deal with the brown, not so good looking Applesauce, If you don't mind, here is a way to avoid that problem. Try this little trick if you would please: In a large pot combine about 2 liters of cold Water and the juice of a fresh Lemon. The acid of the Lemon is what keeps the Apples from turning brown. Now cut all your Apples into that Lemon Water. When your done preparing the Apples, drain the Water, except for about two cups of the Lemon Water. Return that with the Apples to the cooking Pot and cook until done. For great extra Flavor, ad 1 or 2 Tablespoons of regular or brown Sugar or Honey and a stick of Cinnamon if you like Cinnamon. Pleace cook slowly to avoid Food burn! There you have it, enjoy! One more thing, this whole process should be done in a Aluminum or Stainless Steel Pot, because the Cast Iron will oxidise and turn the Applesauce nasty and that is due to the natural acid content in the Food! Give it a try, I'm sure you'll be pleased. (-:

Fat which includes butter, oils, cheese, is 200 calories an ounce the most sense caloric food. Carbohydrates which includes sugar in its many forms honey, beet, cane, candy, caro from corn, is 100 calories per ounce. Also carbohydrates in many forms bread, biscuits, cookies, hard tack, etc 100 calories per ounce. Lean meat without fat from any animal flying swimming or running, 100 calories per ounce. These are the most caloric dense foods. This has nothing to do with nutrients. If you can determine how many calories you burn in a day out in the woods this will give you a starting point. You probably start at 5000 calories per day and go up from there.

For anyone wondering, there's roughly 4, 077 calories in a pound of fat, at roughly 453 grams per pound, and 9 calories per gram. The same amount of protein would only supply 1, 812 calories from either carbs or protein. and considering how hard Chris & Zach's bodies are working to not only harvest firewood, and paddle that heavily laden canoe, they're also striving to stay warm (fat + water = burning enough calories to stay warm in winter, so hydrate in winter, not just in summer. that's a lot of calories, yes, but still not quite enough! (The recommended 2, 000-2, 500 calories a day is based on our modern sedentary lives)

Are there any risks associated with exposing the cast iron to direct flames? All I know about cast iron is limited to using pans on a stovetop. Heating them on high heat instead of medium heat can warp the bottom over time, and leaving them on high heat for a while can burn off the seasoning where it's in direct contact with the element. Those big pots look like ideal wilderness/outdoors gear if you're trying to make a big meal. The only way I could see the cooking get better is if it were on some kind of tripod so that you didn't need to let the fire burn down to coals. That might run into the problem I mentioned earlier though.

A great product to take out is TrueLemon powder. It can be bought in these little packets like the little salt pkgs at fast food places. only they are tiny Mylar pkgs. One pkg would have kept your applesauce from turning brown. Sprinkle it on fish and on boy it's good. I think it's pure juice crystallized into a fine grain powder. I always tuck a handful into my bedroll.

man i would have the fat pieces in a seperate pot and let it simmer for longer and make it melt on your tounge or lather it onto the beaver like actual butter. thats my favorite with lamb or duck i make it into actual butter bruh. But I guess time is a factor and nothin to fancy for this challenge. love your vids Ontario represent!

-Humans are famous for processing their food! - lmao, you mean Americans right? Here in UK, we eat fresh food all the time. ( except wine, cheese n other stuff that needs age, while I think American wine and cheese is apparently served fresh, you guys lost few recipes pages on the boat over)

Awesome stuff Chris! Headed to the White Mts. for a long get away this weekend, your videos are truly inspiring. Was curious if you tried the merganser? I've heard they're not the best eating birds out there. Excited to see where the next challenge takes you.

Drinking & eating large quantities of fat like that. I don-t think that-s a safe thing to do, is it! . Isn-t that just asking for a heart attack. maybe not a heart attack today but maybe in the future. I was taught that would clog up your arteries. confused -
