In this Clean N Cook episode of BlacktipH, Capt. Preston, the crew from Gulf Angler Fishing Charters and I fillet some of the best-tasting groupers in the world, including Snowy Grouper, Yellow Edge Grouper, Gag Grouper, Tilefish, and a Wahoo. At Preston's home, we cooked all five species of fish differently with famous Chef Tommy from Dock on The Island. Both Tommy and I prepared the grouper cheeks with a new recipe, cooked them in the pan, and they were incredibly delicious Tommy prepared the wahoo with jerk seasoning, coastal slaw, and pico to make wahoo tacos. For the tilefish, we created a southern-style dish with garlic mashed potatoes, braised greens, and sweet corn butter. The snowy grouper was grilled Island Style with summer squash, Jamaican rice, and caramelized pineapple butter. The Yellow Edge grouper was cooked Louisiana Bayou style with blue cheese crawfish au gratin, grilled asparagus, and lemon garlic. Once Tommy finished cooking, we tasted everything, and the judges picked their favorite dish.
