Saltwater Fishing for Huge Predator Fish

Cobia with Lemon Caper Sauce
Ingredients
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 lb cobia or sea bass fillets, cut into 4 pieces
2 tablespoons olive oil
1/3 cup dry white wine
1/2 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1 tablespoon capers, rinsed, drained
1 tablespoon chopped fresh Italian parsley
Directions
In shallow dish, stir flour, salt and pepper. Coat fish pieces in flour mixture (reserve remaining flour mixture. In 12-inch nonstick skillet, heat oil over medium-high heat. Place coated fish in oil. Cook 8 to 10 minutes, turning halfway through cooking, until fish flakes easily with fork; remove from heat. Lift fish from skillet to serving platter with slotted spatula (do not discard drippings); keep warm.
Heat skillet (with drippings) over medium heat. Stir in 1 tablespoon reserved flour mixture; cook and stir 30 seconds. Stir in wine: cook about 30 seconds or until thickened and slightly reduced. Stir in chicken broth and lemon juice; cook and stir 1 to 2 minutes until sauce is smooth and slightly thickened. Stir in capers.
Serve sauce over fish; sprinkle with parsley.

went to the cayman islands and was snorkelling. All of a sudden all the decent size reef fish disappeared and I felt like I was being watched. I look around and see a HUGE Goliath Grouper. Big enough to where I think it was thinking about trying to eat my 140 pound 16 year old body. I've swam with sharks but for some reason i was more scared of the Goliath grouper. Probably not logical but it look like it was sizing me up and I would have had no problem fitting in its gullet. Don't know what weight they get to but this fish had to be 1000+ pounds. it was about the size of an SUV. Give or take

Lucie, West Palm Beach area) looking for the best captain you hold in
the highest regards to put us on good fish. Can you recommend a couple
grade A captains that you've been with or know are great?

That was one very cool day of fishing. I have one Hammerhead story, but I wasn't fishing. It was during a water SAR (search and rescue) exercise, near Subic Bay in the Philippines. All I can say is that I was lucky to not become its dinner that day.

I feel sorry for you guys that one guy kept loosing your fish. I hate it when people buy all that expensive clothes and gear but can't land let alone keep a fish on. Smh
