Iguana is a very good form of protein. A commonly eaten animal in the Caribbean and Central/South America. I have caught and cooked them many times since Florida FWC put out Order 20-17. Props to James on his cooking skills. I have a great recipe for jerk iguana if someone wants it. Also mango coconut curry braised iguana. My two favorites for iguana.

Btw Yames, tried blackened gator at Ralph and Kacoo's on Toulouse St 25 years ago in NOLA on a Jazzfest week, soooo delicious! City boy realization that all reptiles taste real good. if we didn't harvest them they would take over the planet again, don't forget, they were shotcallers on Earth for 100 million years a while back.

How long did you fry the iguana legs? Also, where is the best spot for catching Snakeheads? I want to surprise my friends with an exotic meal! I myself has never had iguana or snakehead meat but I'm always looking for new a new dish to try. Thanks in advance!

Just wondering, is there a limit for you to keep on the Snakehead? If they are invasive, why not keep all of them and freeze them? Or keep for future fish bait? Thanks.

I wish I was in FL I love iguanas as pet but they are destroying the environment, but with that they can fill your freezer and they taste good
